On 14, 15 and 16 June Steinbeisser and ‘Vereniging Hendrick de Keyser’ will bring one of Asia’s best chefs André Chiang to Amsterdam for a new edition of Experimental Gastronomy, Steinbeisser x André Chiang. Chef André Chiang will create a special organic vegan tasting menu in collaboration with fifteen artists who will craft custom cutlery and tableware especially for the occasion. Experimental Gastronomy is an unique immersive experience that brings together acclaimed chefs and artists to create an exciting and radically different way of enjoying food.

One of the most talented, driven and competitive cooks in the world, André Chiang has been searching for perfection for the entire course of his near 30-year career. Recently awarded Lifetime Achievement Award, his flagship Restaurant André reached No.2 in Asia’s50 Best Restaurants, No.14 in The World’s 50 Best Restaurants and has 2 Michelin stars. Chef André has researched how our capacity to taste food is influenced by our memory, through the personal experiences we acquire over time. This has led him to develop the culinary principle, Octaphilosophy, based on eight primary characteristics: Unique, Texture, Memory, Pure, Terroir, Salt, South and Artisan, the backbone of his creative process. For Experimental Gastronomy he will serve a plant-based (vegan) menu created entirely with ingredients sourced from organic and biodynamic producers found in the Benelux, France and Germany.

Why do we eat the way that we do and are there other options? With this question in mind Steinbeisser explores new ways to eat mindfully. Fifteen artists will work with us to seek answers by creating new kinds of cutlery and dishware that disrupt the conventions of dining. These unique pieces made from materials such as clay, cotton, metal, paper, and wood, will enrich the dining experience in the most unexpected way. The location and collaboration

The Gemeenlandshuis is one of the exceptional locations that Vereniging Hendrick de Keyser keeps for the future and makes accessible. Surrounded by water, with the encroaching city in the background, the stately Gemeenlandshuis Amsterdam seems made for the culinary experiment of Steinbeisser. Where once the dike earls gathered, visitors are now invited to feel at home in a setting that we mainly know from films. All your senses are stimulated by this cross-pollination of gastronomy, art, design and architecture. Van der Kroft Rentalis working with Steinbeisser on this project with the ambition to promote unconventional food concepts and creative presentations.
