At horecatrends.com we spot many national and international trends on a daily basis. We pick the most interesting ones to write about, the other trends we use in our weekly column ‘Trends we spotted this week’.

With this week’s links to articles including the presentation of the We’re Smart awards, there are 16 Dutch restaurants on this list of the best vegetable restaurants in the world. ‘De Nieuwe Winkel’ in Nijmegen is number 1 again.

Pink and yellow oyster mushrooms are included in the range of products of the exotic mushroom grower Oakfield as well as bundle-, white beech-, wig- and coral mushrooms.

The Casual Pint Craft Beerstro launched Tap4Good. A national fundraising initiative to support local communities. The local manager decides the charity!

In London, ‘The OWO Residences by Raffles’ recently opened and Starbucks opened its China Coffee Innovation Park (CIP), achieving its vertical integration ‘from bean to cup’ in one market – a first for the company globally.

Bakkit.nl creates ‘the Rotterdam Roll’ – a rolled croissant in various flavours. They also sell other pastries. Speaking of croissants, Dominique Ansel, the inventor of the cronut, presented a vegan cronut for the first time in September.

Pizza Hut in Germany recently introduced ‘Pizza-Sandwich’ Melts and a special McDonald’s restaurant in Terminal 1 of Sydney Airport!

A capital injection for Zence Object in Macau: for a project to convert used tea leaves and other local bio-waste streams into packaging and other industrial items.

And an interesting design article on Eater about the neon walls, palm-shaped chairs and giant pepper mills of Shuggie’s Trash Pie, they call it maxed-out restaurant design for 2023.

For peak culinary creativity, look no further than the vegan bakeshop

Dominique Ansel introduced his first vegan Cronut. Ansel announced the one-weekend-only special on September 20, in an Instagram post. The Huckleberry Hound-colored rice pudding inside the pastry, color of the year 2024, was the inspiration of Ansel that led him to dream a dream of “making the first-ever vegan version of the Cronut®”. “We were so excited at the results and how we could push forward with entirely new techniques, flavors, and ingredients,” he wrote. Maxed-out restaurant design in 2023 | Fun by Design

Another interesting design article at Eater, link in the title. Neon walls, palm-shaped chairs, giant pepper grinders — there’s nothing subtle about maxed-out restaurant design in 2023. Walking into Shuggie’s Trash Pie is like entering an acid-tinged glam paradise. It’s no secret that this trend is a response to the last few pandemic-stifled years. Co-owners Abe and chef David Murphy, who designed Shuggie’s themselves, wanted to subvert the blah beige walls, hemp-fiber textiles, and other stale notions of what an environmentally minded restaurant should look like.

Turning spent tea leaves into packaging

It is estimated that the world will consume 7.1 billion kilograms of tea in 2023, and a Macau-based startup is working to develop sustainable materials from the spent tea leaves. Turning spent tea leaves and other local bio-waste streams in to ‘eco-friendly’ materials that can be ‘seamlessly integrated’ into everyday life. Some of the Zence Object initial products include biodegradable tea paper, formaldehyde-free tea board and tea plastic, which is waterproof, washable, and temperature-resistant. Zence Object has recently secured $2.5 million in Seed funding from the AEF Greater Bay Area Fund (AEF GBA) managed by Gobi Partners GBA (Gobi GBA). McDonald’s Sky Kitchen at the airport of Sydney

At Sydney Airport’s Terminal 1 McDonald’s is taking its iconic golden arches to a whole new level. Featuring a glowing yellow glassed-in kitchen located well above the dining public, this restaurant is hard to miss. It does so through reimagining the fast food experience – with a see-through ‘kitchen in the sky’ placed directly above order counter. Their website is linked in the title.

Pizza Hut in Germany introduces the ‘Pizza-Sandwich’ Melts

The Pizza-Sandwich Melts are available in 3 different flavours: pepperoni lovers, creamy chicken and spicy veggie. Thanks to their practical shape, they are easy to eat, without a pizza cutter. Available at all Pizza Hut locations in Germany.

Bakkit.nl creates ‘de Rotterdamse Rol’

Bakkit.nl is a newly opened bakery located in Rotterdam. They have this special French pastry with a twist of Rotterdam called ‘de Rotterdamse Rol’. Everything at their bakery is homemade and freshly baked! Next to the ‘Rotterdamse Rol’, a rolled croissants with different flavours, they bake madeleines, cannelés and other pastries. Starbucks China Coffee Innovation park

Starbucks recently announced the opening of its China Coffee Innovation Park (CIP), fulfilling its scaled vertical integration ‘from bean-to-cup’ across one market – a first for the company globally. Since the CIP’s initial announcement in March 2020, Starbucks has made two additional rounds of investments, making it the largest investment in any Starbucks coffee manufacturing and distribution center outside the United States at US$ 220 million. The CIP holds the distinction of being designed to be Starbucks most energy efficient and sustainable coffee manufacturing and distribution center in the world. The OWO and Raffles London at The OWO recently opened

Set in a building of epic proportions, The OWO is home to the first Raffles hotel in London, The OWO Residences by Raffles, and a collection of independent restaurants and bars drawn from dynamic culinary hubs across the globe. The OWO heralds a new chapter for Whitehall, an area synonymous with politics, as an exciting place to drink and dine, celebrate, be entertained, rest and recharge, stay and live. The Casual Pint Craft Beerstro launched Tap4Good | A nationwide fundraising initiative to support local communities

This November, The Casual Pint, a leading Knoxville-based craft beer market and restaurant franchise, is elevating its commitment to community service with the launch of Tap4Good. “Throughout November, each of our franchises will dedicate Tap #4 to a cause that truly matters,” states Joshua Robinette, CEO of The Casual Pint Franchising, Inc. “A portion of the sales from this specific tap will go directly to a nonprofit organization, chosen by each individual franchise owner. Flore from Amsterdam at impressive sixth place We’re Smart Award and the Nieuwe Keuken for the second year around first

Last October 24th, We’re Smart, presented their annual Awards of the world best vegetable restaurants. There were awards for the best vegetable restaurant in the world, the best female vegetable chefs and a selection of remarkable, sustainable and healthy food innovations. Amsterdam-based restaurant Flore from chef Bas van Kranen also came in a great sixth place this year. Pink and yellow mushrooms

The Netherlands’ largest exotic mushroom grower, Oakfield, has expanded its range by as many as seven new exotics. Oakfield is known for growing mushrooms locally, organically, sustainably and circularly. In addition to their fast selling products such as king oyster mushroom, oyster mushroom and shiitake, they now also sell yellow and pink oyster mushrooms, bundle mushrooms, white beech mushrooms, wig mushrooms, coral mushrooms and oak hare. The demand for more healthy and sustainable food with less sugar, salt and meat is creating a growing interest in the exotics.
