In English they call it a caviar bump – in Dutch: ‘Slurping caviar’. According to House of Caviar & Fine Foods: the trend of this year. Our colleague Leonie van Spronsen wrote a blog about it in May this year, unfortunately in Dutch. In this blog, she also gave another delicious recipe that should be served on hand, a combination of pata negra and foie gras. Both products must be at the right temperature; fold a slice of the pata negra and place a cube of foie gras on it!
A murder case at the Tamina Therme, six suspicious guests and a master detective. This is the basis of the first fictional crime podcast from a Swiss luxury hotel. The Grand Resort Bad Ragaz launched this audio experience yesterday in Bad Ragaz. The five episodes of ‘Murder at the Grand Resort’ were produced in collaboration with the Winterthur-based company Podcast Schmiede and are based on the famous crime story ‘Murder on the Orient Express’ by Agatha Christie. The postcast is in the German language and is officially called “Mord im Grand Resort’, good to practice your German.😉
Maritim Hotel Amsterdam will open its doors next year. This week they launched a unique campaign to recruit team members. The hotel is going to help its employees to realize their dream job, even if it is outside the hospitality industry.
December 14, Starbucks started their search for five of the merriest homes in the U.S. – and the stories behind the people who bring cheer to their neighborhood during the holidays. This holiday season, Starbucks is teaming up with singer, songwriter and actress Christina Milian. From December 14 through Sunday, December 17, Starbucks invited everyone to share how their home’s holiday display brings cheer to their neighborhood. Everyone could submit an image of their very merry home to holidaycheermakers.com and share their story and inspiration for a chance to be selected as one of Starbucks Holiday Cheermakers. Five winners will receive Starbucks Cards for their neighborhood to enjoy.

In America, Mac & Cheese is hugely popular and available with all kinds of ingredients, even with crab and lobster! Why this dish isn’t as popular here in Europe, we really don’t understand. Recently, we came across the Mac & Cheese Nibblers from White Castle, an American fast food chain. They are putting their beloved Sloppy Joe, Smoky Joe and Spicy Joe Sliders, along with the Mac & Cheese Nibblers, back on the menu during the winter months until February 4.
Their Nibblers look like our famous ‘bitterballen’ with a creamy content of macaroni and cheddar! We think a lot of Dutch people would love them as well!

Sam’s Anchor Cafe – open since 1920 on the San Francisco Bay – has completed a successful launch of its first NFT (non-fungible token) collection, raising more than $300,000 with a sell-out of the limited-edition Sam’s Bootleggers NFTs. Sam’s Bootleggers NFTs, with artwork by San Francisco designer Anthony Laurino, were developed by ViciNFT. The 244-unit collection sold out entirely through presale! The NFTs are caricature images of Sam Vella, a notorious bootlegger who founded Sam’s during Prohibition.
‘Watt’n Blick’ is the name of the food concept of two young entrepreneurs from Norddeich, their name can be translated as ‘What a view’ and that is because their guests can enjoy a unique North Sea panorama. On Saturday, September 24, Fat Phill’s celebrates the Grand Opening of their new location in the Dutch city Leiden with an exclusive opening action. The family business Privatkelterei Van Nahmen has been around since 1917 and started producing apple syrup. Since the 1930s, they started specialising in fruit juices also. Current owner Peter van Nahmen combines sustainability and tradition with innovation. Resulting, among other things, in ‘Sparkling Juicy Tea’. Three unique products have emerged from a collaboration with tea sommeliers, including Niklas Schmeink (Tea Master Gold): unique blends of cold brew tea and fruit juice. A beautiful, ecological and vegan alternative for those who have to drive everybody home or those who don’t drink alcohol!
Botanical brewer Lowlander brings a breath of fresh air to the fall beer season and introduces the Lowlander Pumpkin Weizen (5% abv). In keeping with the beer brand’s ambition to become “Nature Positive” by 2030, the Pumpkin Weizen contributes to the fight against food waste. The fall beer is brewed with rescued pumpkins that could not be sold due to beauty flaws. The Lowlander Pumpkin Weizen is from now on available at Albert Heijn, in the better catering industry and via the Lowlander webshop, among others.
We previously wrote about the first alcohol-free craft beer tap and Lowlander’s Cool Earth Lager, to combat climate change. In 2021, for every Cool Earth Lager beer sold, Lowlander planted a seagrass plant in the Wadden area. Last year we also wrote about their I.P.A. Team of renowned chefs and sommeliers open a restaurant this fall.
When a variety of individuals and factors come together, something unique is born. This fall, a similar symbiosis is planned with the launch of a new restaurant that brings South Africa and Amsterdam together. SAAM restaurant (South Africa – AMsterdam), which also means “together” in Afrikaans, is the outcome of a merger of these two culinary worlds. The staff behind this restaurant has a clear goal and a wealth of expertise. Executive chef Margot Janse oversees the kitchen, which is headed by chefs Jasper Hermans and Thomas Kooijman. A staff of expert sommeliers, led by Koen van der Plas and Max van Bockel, is also on hand to serve the finest wines from South Africa and Europe to SAAM restaurant visitors. Rosemary Wessels oversees sales, marketing, and the back office.
We recently wrote about another interesting concept that will launch in Amsterdam this fall. Cape Town Social Club is another hospitality outlet with an South-African twist that will open this fall in the Jordaan. We are really curious about both concepts and hope to visit them soon!

Revealing an unseen archive of backstage fashion photography from the 90s
From 15th September 2022 – to coincide with London Fashion Week – Claridge’s ArtSpace will exhibit celebrity photographer Gavin Bond’s unseen archive imagery from the early 90s fashion scene in a specially curated 4-D showcase. The Gavin Bond: Being There Showcase presented by Moët & Chandon and Claridge’s will present photography of standout fashion moments featuring designers from Yves Saint Laurent and Jean Paul Gaultier, to Valentino and Versace, and the supermodels of the era – from Kate and Naomi to Claudia and Carla. This photography, rediscovered by Bond in lockdown, results in a sensational showcase of large scale vinyls of the shots, plus displays of Bond’s many scrapbooks, collections of 90s headline catwalk show invitations and video footage from the era.

Restaurant De Leuf in Ubachsberg, South Limburg, has a new interior. The top restaurant of the Van de Bunt family got a contemporary design with Asian elements executed in local materials. The interior is now even more in touch with the cooking style of De Leuf, which combines modern French cuisine with Asian influences.
The interior has been given a serene atmosphere with subtle Asian elements, executed in local materials. Tim Reiters of Ontwerpbureau Reiters in Maastricht signed for the design, which has the theme ‘Asian aesthetics using local materials’.

Opening – Restaurant Morille in Koudekerke, Zeeland, is going one step further in cooking with local ingredients and its own wild pickings. By September 2022, the dishes will be largely botanical, with only an occasional dish complemented by a local and honest piece of fish, meat or venison. Only Dutch and Belgian wines will be served. Chef Dennis Willems’ restaurant achieved listings in restaurant guides such as Michelin, Gault&Millau and Lekker with its local nature cuisine since opening in 2019.

It is an old Jewish saying that means something like wishing someone a lot of worries and a lot of misery but many hospitality companies are currently having a lot of worries due to the lack of employees. Of course, the best approach is to discuss with your team what you can do to make sure those who work for you are staying. We’ve come across solutions such as closing an extra day, adjusting opening hours, but also snatching staff away from other restaurants. And of course making wages more congruent with other industries. Opening in Antwerp – Camille and Boqion from Camion opened their second branch – plant-based fine dining Camionette – on the PAKT site on Friday 1 July. What initially began in 2019 as a plant-based lunch and aperitif business soon turned into a full-blown restaurant. They soon came up against the limits of their small premises, especially the very small kitchen, so after three years it is time to move to a place where they can once again expand their culinary ambitions. From now on, Camion will continue as a low key breakfast and lunch bar, while at Camionette you can go in the afternoon as well as in the evening for all sorts of sharing dishes or a nice glass of natural wine at the bar.
On 16, 17 and 18 September, the Werkspoorhaven in Utrecht will be transformed into a true beer-walhalla during the Uncovered Festival. More than 15 different breweries will present the beers they are most proud of. As guest, you can visit the bars of all these breweries and taste their beers. There are even special ‘beerflights’ arranged by the organisation that make sure you can taste different beers in the right taste intensity.
Food start-up GREENFORCE is launching a B2B platform this month to serve the hospitality industry in the Netherlands with its vegetable powder mixes in bulk packaging. With this development, they are responding to the demand from restaurant guests for more vegetable options on the menu.
