Atomo created the future of coffee; coffee without a bean. Startup Atomo, located in Seattle, uses naturally derived sustainable ingredients to create a smooth coffee with a perfect caffeine kick. By reverse-engineering the coffee bean, Atomo has created a naturally-derived and sustainable coffee with the same caffeine you’d expect and no harsh acid or bitterness. They analyzed the molecular compounds  in a cup of coffee and used the coffee’s blueprint to design the perfect cup of coffee without using any coffee beans. They produce a ground coffee, which looks and acts like a regular ground coffee and can be used in drip machines, pour overs, cups and French presses.

Atomo created the future of coffee | Molecular coffee accessible to all

There are two key reasons why Atomo invented their new Molecular Coffee. One of them was to get rid of the bitter notes that are often masked by cream and sugar by coffee drinkers. As side effect it will also help reduce the amount of calories often consumed by drinking coffee with the cream and sugar!

Another key reason for this novel coffee substitute is sustainability. With factors like climate change and drought threatening coffee farmers around the world, a pressing challenge for the future is how to meet coffee demand with likely fewer available trees. In January 2019, a study was released by Science Magazine stating that 60% of the world’s coffee species are in danger of going extinct in the next 50 years due to climate change, population expansion, and disease. And every day, right now, forests are being mowed down to make room for new coffee plantations. Atomo’s coffee is produced without the need for deforestation or pesticides and contains none of the harmful carcinogens that develop during the roasting process. “We believe we have a moral obligation to stop harmful coffee farming practices, but none of us want to stop drinking coffee.” said Andy Kleitsch, CEO of Atomo. “Atomo’s technology can halt the need for further deforestation by reducing the demand for coffee beans.” Atomo is a substitute that can potentially address this in a sustainable fashion without sacrificing coffee’s full sensory experience.

Atomo launched on Kickstarter and although they already reached their goal, you can still fund them.  By participating in Atomo’s Kickstarter campaign, contributors can be the first to receive Atomo’s molecular coffee by the end of 2019, to conduct their own coffee challenge, pitting their regular morning brew against the new cup from Atomo.
