Food sculptures or designer cakes, some show an artistic and architectural approach to food like the KUFcakes. These are bespoke luxury cakes designed in close conjunction with the client. KUF stands for Kia Utzon-Frank who designs and creates her cakes by using a marzipan printer that creates patterns and imagery onto marzipan and fondant and cover the cakes to make edible sculptures that fit their surroundings. The artist indicates that taste is as important as the look. She hopes that the KUFcakes will make people curious and that the cakes will trigger them to start a conversation.

KUFcakes

KUFcakes are geometric marble sculptures made by Kia Utzon-Frank and were presented at the Clerkenwell Design Week May 2016. The cakes look like blocks of polished stones or cones. The marble effect is achieved by printing a texture onto a sheet of fondant icing. The inside is made of thin pieces of sponge cake layered on top of each other to create a multi-coloured effect. The decorations are made in the colours that the clients indicates. Check this video from Wallpaper about the process of shaping the KUFcakes.

“I found a printer that can print on marzipan and fondant in really high quality so I can print exactly what I want and wrap it around a cake,” Utzon-Frank told Dezeen. “For the colours I use natural food colouring and fruit juices, but it takes a lot of tests to get the colours or a gradient right.”

“The recipe is for a very thin roll cake that I layer with different infused chocolate ganache’s and jams and then I can shape it however I want,” she added. “I almost think that the bottom of the cones are the most beautiful part of the cakes, but you won’t see it before it’s been cut.”

More inspiration around designer cakes

Although we spotted a lot of other edible food creations that look like stones (for example at Usagi no Nedoko Kyoto) we were surprised by the KUFcakes. Designer cakes like these would fit every buffet. And the smaller sculptures are great at an afternoon tea.
