During the Dutch Horecava GRO (Green Recycled Organics) presented the Blended Burger® to the hospitality industry. This hamburger new style consists of a tasty mix of oyster mushrooms grown on coffee grounds and high quality Dutch milk beef. A healthy, tasty and responsible alternative for the traditional burger and yet another initiative to gradually reduce our meat consumption.

Blend is the trend | The Blended Burger

In the Dutch food sector there is growing attention for healthy food and responsible business. There is also a joint challenge to reduce meat consumption in order to protect people and the environment. Meat substitutes are not often perceived as a tasty alternative by Dutch consumers. And in addition, we even have difficulties to consume our daily recommended amount of vegetables.  The Blended Burger® from GRO anticipates these developments and offers a tasty alternative. Together with culinary expert and top chef, Jean Beddington, GRO has developed a recipe for an especially tasty hamburger with vegetable and animal proteins. The Blended Burger® consists for 50% of oyster mushrooms and for the remaining 50% of Dutch beef from milk cows and herbs. The burger doesn’t contain any additives, such as flavor enhancers and e-numbers. The oyster mushrooms also ensure that this burger contains considerably less calories and fat than a regular (beef) meat burger.

Oyster mushrooms | Taste maker in the kitchen

Oyster mushrooms are healthy, low in calories and fat and rich in minerals, vitamins and fibers. In addition, they are known as a true seasonings in the kitchen. The fleshy structure of the ‘mushroom’ also makes them a suitable alternative to meat. The oyster mushrooms for the Blended Burger® are grown on coffee grounds in the south of the Netherlands, and the coffee grounds are collected via foodservices and catering companies.

Switch to vegetable proteins

Jan Willem Bosman Jansen, initiator GRO: “We have known for years that the current consumption of animal proteins is not sustainable for the future. The switch to, among other things, plant sources is badly needed. Our burger contributes to this: it halves meat consumption, does not detract from the experience and taste of eating meat and makes the switch to eating more vegetables easier. In addition, the production of the oyster mushrooms is a circular and sustainable process. In short: the Blended Burger®, is the responsible alternative for people, animals and the environment.”

In 2017 we already wrote about a similar initiative: Meat Your Veggies in which a residual flow of ‘mushroom stems’ is combined with meat from the meat company Bolscher.
