Every day, we spot fun and inspiring new concepts. This week: Gyojasang, smashburger temple MOSH!, and fine-dining restaurant NORRA. NORRA recently opened its doors in Bilthoven, offering three different menus and a power lunch. In Amsterdam, Gyojasang promises a full Korean dining and experience concept, with authentic dishes, cocktails, private karaoke rooms and a photobooth. The opening is planned for early May. Meanwhile, in Bruges, smashburger hotspot MOSH! will open at the end of May. Founders Tom Degroote and Pieter Vermeersch – childhood friends from the hardcore music scene – are combining their passion for artisanal smashburgers, natural wine, and music.

Gyojasang brings Korean dining culture to Amsterdam
Early May, Gyojasang will open its first location in the Netherlands, located on Amstelstraat in Amsterdam. Following successful launches in Brussels, Antwerp, and Barcelona, the concept now brings a complete experience to the Dutch capital, featuring authentic Korean dishes, cocktails, private karaoke, and a photobooth.
The menu combines classics like bibimbap and tteokbokki with modern twists, all made with fresh, carefully selected ingredients. Gyojasang — Korean for “dining table” — is a place where people come together to share, taste and enjoy. The menu is an homage to traditional Korean cuisine, enriched with contemporary influences. From bibimbap and the spicy snack tteokbokki to creative gimbap variations and Korean pancakes, each dish is thoughtfully crafted.
In addition, Gyojasang offers a selection of Korean cocktails and soju wines to perfectly complement the dishes. The opening is a collaboration with the Fulum Group, which operates the concept in Asia, and is initiated by the hospitality group behind the successful Takumi restaurants.
Bruges Welcomes its first smashburger temple | MOSH!
At the lively Sint-Jansplein in Bruges, MOSH! will open at the end of May. The place where artisanal smashburgers, natural wine, and hardcore music come together. Founders Tom Degroote and Pieter Vermeersch, childhood friends from the hardcore scene, are blending their passion for music and flavor in this new hotspot.
MOSH! serves smashburgers made with dry-aged beef from Hendrik Dierendonck, complemented by local ingredients and homemade sauces. Signature burgers include The O.G., Seoul Supreme, and Cheesy KitKat. Vegetarian options are also available. MOSH! aims to be a vibrant meeting spot, featuring collaborations with top chefs and an eclectic Spotify soundtrack. Diversity and inclusivity are key values.
The interior, designed by Bjorn Verlinde, combines Bruges’ medieval character with a bold, industrial style. MOSH! respects the UNESCO heritage setting while adding a modern edge. About the founders: Tom is an expert in premium meats and outdoor cooking and brings his culinary experience to MOSH! Piet is a former finance expert and street food enthusiast and provides the business expertise. Together, they are creating a raw, accessible food spot for both locals and visitors of this unique Belgian city.
Restaurant NORRA in Bilthoven | Three Menu Options
We previously wrote about the new fine-dining restaurant in Bilthoven. On April 2, 2025, hostess Lieke Nicole-Creemers officially opened Restaurant NORRA at Emmaplein. Chef de cuisine Boy van Rijn presents creative, distinctive dishes with a refined twist. At NORRA, guests do not order surprise menus; instead, they can choose from carefully written menus to make an informed choice:
- Signature: A menu of four to seven courses
- Botanique: A vegetarian menu of four to seven courses
- Robuust: A three-course menu
Alongside these menus, they also offer a two-course power lunch.
