The book is written in Dutch but it might be inspiration for other chefs!

Here in the Netherlands, we need to put our coats back on and it’s getting dark early. In short Autumn has really started after a beautiful summer. We have been able to enjoy many drinks on the terrace this year, as can be found in our lists of popular summer drinks and craft liquor drinks from the Netherlands. Now it’s time for autumn, forest walks, hot chocolate, games and Halloween. Even here in the Netherlands, this holiday is being celebrated more and more often. A thousand bottles, a lot of beer, one genever. On 13 October, Brewery ‘t IJ in Amsterdam will launch its first own limited edition spirit. The kopstoot or in English heatbutt is a glass of beer with a genever and a typical Amsterdam invention. As an Amsterdam brewer, the choice to make genever (Dutch gin) alongside beer is therefore a logical one. Brewery ‘t IJ decided to distil beer and process it into genever, whose characteristic flavour is due to additions of celery and caraway seeds. A drink according to the standards of ‘t IJ: pure and smooth, with a soft spiciness that combines well with the beers of Brewery ‘t IJ.

The seaworthy and semi-mobile bistro in the QUB® container is the first on the seaward side of the dike in Germany.

Asian BBQutie is open until the end of December in the bridge keeper’s house on the ‘Lage Erf Brug’ in the Delfshaven, Rotterdam. The location is very small, so they only offer one table, perfect for a group of up to 10 people, if you come with less you slide in with others. This is Asian BBQ’s 9th location in 14 years, they offer a small menu and Moo Kata. At the bridge keeper’s house you can enjoy the view of the Schie, quite spectacular when the bridge opens!

Botanical brewer Lowlander brings a breath of fresh air to the fall beer season and introduces the Lowlander Pumpkin Weizen (5% abv). In keeping with the beer brand’s ambition to become “Nature Positive” by 2030, the Pumpkin Weizen contributes to the fight against food waste. The fall beer is brewed with rescued pumpkins that could not be sold due to beauty flaws. The Lowlander Pumpkin Weizen is from now on available at Albert Heijn, in the better catering industry and via the Lowlander webshop, among others.

We previously wrote about the first alcohol-free craft beer tap and Lowlander’s Cool Earth Lager, to combat climate change. In 2021, for every Cool Earth Lager beer sold, Lowlander planted a seagrass plant in the Wadden area. Last year we also wrote about their I.P.A. Re-Genever, their Botanical beer garden to go and more other interesting articles. We are always very enthusiastic about the initiatives of Lowlander, and we are again very curious about this new beer, what would you drink it with?

Opening – Restaurant Morille in Koudekerke, Zeeland, is going one step further in cooking with local ingredients and its own wild pickings. By September 2022, the dishes will be largely botanical, with only an occasional dish complemented by a local and honest piece of fish, meat or venison. Only Dutch and Belgian wines will be served. Chef Dennis Willems’ restaurant achieved listings in restaurant guides such as Michelin, Gault&Millau and Lekker with its local nature cuisine since opening in 2019.
