Nobu Hospitality, the global lifestyle brand founded by Nobu Matsuhisa, Robert De Niro, and Meir Teper, announced its fourth Spanish hotel and restaurant – Nobu Hotel and Restaurant San Sebastián. With a strong focus on cuisine, local culture, and architectural design combined with an air of celebrity, Nobu may have met its match in San Sebastián. As the capital of Gipuzkoa, this is a city with the most Michelin stars per square meter than anywhere else in the world, the site of Balenciaga’s first atelier, and a place that Hemingway fondly called home while writing ‘Fiesta’. A true culinary mecca, the mountainous Basque Country’s culture is reflected throughout the coastal town, where visitors are invited to hop from bar to restaurant while sampling bitesize gastronomy referred to locally as pintxo.

The Munich-based Ruby Group continues its growth and brings their Lean Luxury philosophy to Italy. In a historic building in the heart of Florence, Ruby, together with GB Holding Group, is realizing a Ruby Hotel with 118 rooms and a Ruby Workspace with a total surface area of approximately 300 m². The images accompanying this article are from Ruby Hotel Louise in Frankfurt. The rooms are the same at all Ruby Hotels, only they can differ in details regarding decoration. Ruby does the design for all her hotels herself, every hotel has the Ruby ‘signature’ but the theme differs, often in line with the history of the building or the location.

Ruby Hotels currently has 12 hotels in Düsseldorf (3), Vienna (3), Frankfurt, Hamburg, Cologne, Munich, Zurich and London. Founder and CEO Michael Struck is breaking new ground in the hotel industry with his Lean Luxury philosophy. Through a lean organizational structure and with a concentration on the essentials, Ruby hotels know how to create a contemporary, affordable form of luxury for modern, cost- and style-conscious customers. The first branch of fast food chain Chick&Cheez opened in Liège, serving original recipes fried chicken and sauces based on cheese. A new challenger on the fast food market in Belgium. And from 2024 the French startup Midnight Trains will start offering ‘hotel rooms on rails’ to travel by night from Paris to different European cities. Comfortable and a more sustainable way of travelling within Europe.

With this week articles about amongst others blue raspberries, their origin and how they are used in products today. Have you hear about them? And about the opening of a new luxury hotel, the Cheval Blanc Paris, with rooms with panoramic views of the Seine.

Chance the Rapper collaborates with Starbucks to promote Starbucks’s ‘Ready to Drink’ canned and bottled coffees with the help of a TikTok campaign, with prizes including a one-on-one video moment with Chance. And an idea to save energy by storing your vegetables in ‘The Groundfridge’. Great idea for chefs who have their own vegetable garden.

We couldn’t find more information yet, but we spotted on the Instagram page of The Avocado Show that they are opening a location in London this summer! We wish their team a lot of success with the opening.

Inspiration for municipalities from Tokyo, the Nippon Foundation launched a new toilet facility as part of ‘THE TOKYO TOILET’ which makes toilets much more accessible to the public. Very handy especially if all restaurants and bars are closed, like during the pandemic!

Future Meat Technologies that has opened the world’s first industrial cultured meat facility. We wonder which food safety authority will be the first to allow human consumption!

Open for 1 month in April 2021: Candytropolis Sugar Rush, a safe, open-air, walk-through family adventure in California. And we loved this ice cream: ‘Not Fried Chicken’ Ice cream! We think it might inspire Dutch ice cream creators to make kroket, bitterbal or frikandel ice cream. Very #Instagrammable!

Within almost 4 weeks it’s going to be a special edition of Valentine’s Day, a day to celebrate love and embrace those close to you. Well it’s going to be though this year to embrace those friends and loved ones, not part of your household. How does the hospitality industry deal with all the restrictions? Well the most important fact is that most restaurants give their guests the opportunity to celebrate it on Friday 12, Saturday 13 and Sunday the 14th of February. We found some great Valentine’s Day inspiration, like classic drive-ins, with carhop service at White Castle, a TLC Valentine’s Box by 2 Dutch chefs highly rated by Michelin and the Guilty Pleasures box by restaurant Hemingway in hotel De Draak (the Dragon) in Bergen op Zoom.

And an interesting read about apps trying to solve the surplus, here in the Netherlands we know ‘Too good to go’ but for example the app Karma makes an extra effort to prevent products going to waste.

For those living in London: there are about 45 Michelin star restaurants where you can eat out and pay partly with the ‘Eat Out To Help Out’ discount.
