Each year, World Cocktail Month sees MGallery Collection celebrate the art of mixology across its properties worldwide, turning the bar into a stage for creativity and connection. This year, MGallery Collection invites guests to experience the bar as a destination in its own right, ‘the art of bar’. In collaboration with Michelin-starred chef Pichaya “Pam” Soontornyanakij, the boutique hotel collection unveils an immersive pairing concept that transforms an evening drink into a curated gastronomic ritual, through the art of pairing cocktails and exquisite bites. World Cocktail Day is on May 13.

Pairing cocktails and exquisite bites during ‘the art of bar’

“This collaboration goes beyond a simple pairing, it is an invitation to reinvent the art of mixology and finger food, transforming them into a sophisticated dialogue between cuisine and cocktail. It reflects our core brand values: celebrating women of exception who inspire us, nurturing the art of mixology, and fostering moments of genuine sharing and conviviality for both our guests and local communities. Chef Pam’s talent and creativity have truly impressed us, and we are excited to see how she will elevate the MGallery experience, allowing cocktails and cuisine to express the individuality of each destination in a more layered and memorable way.” Maud Bailly, CEO of Sofitel, Sofitel Legend, MGallery and Emblems on ‘the art of bar’.

A visionary voice shaping new bar classics

Chef Pam, founder of Bangkok’s Michelin-starred Potong, stands among the most influential voices in contemporary gastronomy. Named The World’s Best Female Chef 2025 and Asia’s Best Female Chef 2024, she is celebrated for a culinary philosophy rooted in contrast, balance and storytelling, where flavour becomes memory and texture becomes emotion.

Chef Pichaya “Pam” Soontornyanakij said “For me, flavour is a language shaped by contrast, memory and emotion. My cuisine is guided by the idea of five flavours and five emotions, striking a perfect balance of taste that evokes feeling and connection. With MGallery Collection, we wanted to let that language unfold beyond the plate and into the bar. These bites are not simply accompaniments; they are intentional compositions, designed to create dialogue between sip and taste. Together, we are celebrating a creativity that transcends borders, where global inspiration is expressed through the soul of each destination.”
