Horecatrends | Tips for Culinary videos worth watching – week 6

5-2-2019

YouTube has been a source of inspiration for spotting trends the past few  years. Every day, thousands of movies are uploaded with new and interesting content. We too sometimes use videos as a source of inspiration to write about. With this week again a selection of videos which Vera Rauwerda thinks are cool to watch. Amongst them a video about the real wasabi and why it’s so expensive. Have you ever heard of the Italian Casu Marzu? It seems to be the most dangerous cheese to eat! This video shows the distasteful process of the making! And a video about an incident at the exam of master sommelier exam in the USA, the highest achievable sommelier certificate.

Why real wasabi is so expensive

I love, together with many others, sushi. After seeing this movie, it became clear to me that the green pasta called wasabi which sushi restaurants serve together with their sushi, not the ‘real’ wasabi is. It is often a mix of different ingredients, amongst which horseradish, mixed with a small percentage of wasabi powder. In the video you can see what real wasabi entails and what makes it so expensive. The wasabi plant is one of the most difficult plants to grow. There is only one place in the world where the plant can grow naturally, and that is along Japanese mountain streams. This is one of the reasons why a kilo of ‘real’ wasabi can cost around $ 250 dollars.

‘Rotten’ cheese made with the help of maggots

On the island Sardinia, a well-known delicacy of Italy has been produced and eaten for years. This delicacy is known as the ‘most dangerous cheese in the world’. The cheese is called ‘Casu marzu’ which literally means ‘rotten cheese’. This cheese is made with the help of live maggots. These maggots give the cheese its unique taste and texture. In the video you can see how this cheese is made. Eating the cheese is seen as dangerous because many people think the maggots will continue to live inside a human’s body after eating this cheese. The cheese is therefore illegal to sell. Personally, I don’t think that I would taste this type of cheese, especially not after seeing this movie!

The scandal in the wine industry

In my opinion the title of this video does not fit well with the content. Because of the title it seems as if the video focuses on the way to train for the master sommelier exam in the USA, the highest achievable sommelier certificate. But in reality, the video tells about an incident which is seen as ‘the scandal’ in the wine industry.

The exam consists of 3 parts and it is so difficult that there are only 300 master sommeliers in the USA left. Every year about 10 to 12 percent of the participants pass the exam. Last year (2018) there were 24 sommeliers who passed the exam, a record number. But over time the board found out that answers of the exam were leaked and spread. This meant that all participants had to retake the test.

The video gets interesting after the third minute, I find it particularly interesting that the four boys, who tell the story have already spent more than 60,000 dollars per person to train for this exam. At first they passed the exam, but because of this scandal they also had to retake the test. Whether they pass the second attempt or not, can be seen in the video!
