Glonut | Glow in the dark doughnut

To celebrate Sidney’s annual Vivid Festival, Australian boutique patisserie Black Star Pastry created a glow in the dark doughnut, or as they like to call them Glonuts. If you are in Sidney you can get them at Martin Place, a pedestrian mall in the central business district of Sydney. They look amazing right?

Inspiration behind the glow in the dark doughnut

The inspiration behind the glonut came while Chris Thé was walking around the Vivid Light, Music and Ideas Festival in 2016. Trying to think of a way to link food with the light show. The answer that popped into his head was to make it glow in the dark. Seeing the amazing Vivid light show is one thing, eating is another!

Just the thought of people eating glow in the dark food at the world famous Vivid festival of light was an amazing challenge that Black Star Pastry couldn’t resist! After coming up with the concept of glow in the dark food it took the team the rest of the year to prove the concept would work. They required a light-proof structure to be built so they had to know they would deliver on the wow factor.

It took a few months of cooking experiments to create something they could be proud of. They thought it would be fun to see people with glow in the dark icing all over their hands and faces so donuts were the natural choice. The glonut is based on our BlackStar donut which is like a brioche with half the butter, so it is light to eat and not at all greasy. The magic is in the icing which glows in the dark under blacklight.

The Glonuts

The ingredient that makes the icing glow is made using Riboflavin (or vitamin B), which in itself is quite acidic and glows under UV light. Riboflavin is natural and safe to eat. They decided to ice the donut in yuzu glaze, which is also quite tart, so there is a balance of sweet and sour on the buttery donut.

Other innovative doughnuts we’ve spotted

In 2013, Pastry chef Dominque Ansel has created a croissant + donut = cronut ™. The cronut ™ is a cream-filled croissant-donut with glaze. Furthermore, there are also doughnut ice cream cones and donut ice cream sandwiches.
