At horecatrends.com we spot many national and international trends on a daily basis. We pick the most interesting ones to write about, the other trends we use in our weekly column ‘Trends we spotted this week’.

Nobu Hospitality continues strategic European expansion with the announcement of Nobu Hotel Madrid, again in a long-term agreement with Millenium Hospitality Real Estate SOCIMI (“MHRE”).

Two new drinks on the Dutch market: the Filipino Santa Ana Gin which is imported by André Kerstens in The Hague and a slow tequila: Mijenta Tequila Blanco and Mijenta Tequila Reposado!

Four Seasons Resort Maui hosts a sunscreen swap for World Oceans Day

Chemicals commonly found in sunscreens lead to coral bleaching and can decrease fertility in fish and other marine life. To get people to break up with their chemical sunscreens, Four Seasons Resort Maui is partnering with a new suncare brand Project Reef.

On World Oceans Day, 8 June 2022, the four Seasons will start offering SPF 30 and 50 versions of Project Reef free of charge from dispensers by their pool and beach. Project Reef also offers Maui residents and island guests a free tube of Project Reef Mineral SPF 30 sunscreen in exchange for a bottle of chemical sunscreen. Pepsi-Roni Pizza | A Cola-Infused Pepperoni

Pepsi enlisted chefs from the Culinary Institute of America to perfect the odd topping. Pepsi has unveiled a pie that, regardless of how it tastes, is certainly discussion-worthy: a pizza topped with cola-infused pepperonis.

The Pepsi-Roni Pizza, launched May 20 and is billed as ‘a complete reimagining of this American staple’. Pepsi enlisted chefs from the Culinary Institute of America to perfect the odd topping. More details in the article of Food & Wine, link in the title.

This Pepsi-Roni Pizza was only available on May 20 at a single pizza shop: Made in New York Pizza West Village, located in Lower Manhattan at 561 Hudson Street. But Pepsi says the innovative pie will receive select rollouts in a handful of other popular pizza markets around the country including LA, Detroit, Miami & Chicago.

Chambord Foam | Dessert spotted on the Instagram account  of Olivier Dubreuil  

At The Venetian Resort in Las Vegas guests will be able to enjoy a new dessert action station soon, which includes ‘Chambord foam’. Looks really cool! Spotted on the account of Olivier Dubreuil (link in the title), the executive chef of the Venetian/Palazzo. His executive pastry chef is Simon Brégardis, both are members of the Académie Culinaire de France. Both accounts offer great inspiration for chefs.

Around The World collection | Inspiration from the French pastry chef Dominique Ansel

We’re fans from the French pastry chef Dominque Ansel (link to his Instagram in the title) since we visited his bakery in Soho and now he and his team created the Around The World collection that will be sold from June 3rd through July 21st in his bakery. It started with the idea that everybody has missed traveling over the past 2 years and is excited that the world’s opening back up again. With their collection they pay tribute to some of our favorite global food destinations, including:

  • Italian Burrata: creamy mascarpone mousse with a hint of fresh basil, strawberry compote, olive oil biscuit.
  • Japanese Soufflé Pancakes: maple mousse, caramelized bananas, pecan feuilletine, salted mascarpone “butter”.
  • French Brie Cheesecake: light and silky brie mousse cheesecake, almond biscuit, sablé Breton.
  • Hong Kong Lemon Tea Juicebox: a nostalgic nod to childhood lemon tea juice boxes (and their sister shop @dangwenlihk!), with bergamot lemon curd, Earl Grey mousse, almond biscuit, and white chocolate feuilletine.
  • Mexican Taco: sweet corn crémeux, milk chocolate mousse, flourless chocolate sponge, lime gelée, in a sweet corn sablé cookie “shell”.
  • Thai Mango Sticky Rice: fresh mango compote, creamy coconut rice pudding, almond sticky rice sponge, white chocolate leaves.
  • Haute Dog: celebrating our NYC home, with raspberry crèmeux, biscuit à la cuillère (ladyfingers) infused with coconut, passionfruit “mustard,” shredded coconut “kraut”.

Chipotle kicks off pride month with ‘Always Real’ actions for the LGBTQIA+ community

Chipotle Mexican Grill announced its ‘Always Real’ support for the LGBTQIA+ community in honour of Pride month. Chipotle worked with its PRIDE Employee Resource Group to identify pressing issues that members of the community face, and together developed its first-ever program dedicated to yearlong support.

Food insecurity, the state of being without reliable access to enough affordable, nutritious food, disproportionately affects members of the LGBTQ community. To help address this crisis, Chipotle is teaming up with Happy Hippie, a non-profit organization founded by Miley Cyrus whose mission is to fight injustice facing homeless youth, LGBTQ youth, and other vulnerable populations, to provide $250,000 in free Chipotle to Happy Hippie’s partner LGBTQIA+ centres across the country, giving them access to real food throughout the year.

Now through June 16, guests in the U.S. can round-up their order total to the next highest dollar amount on the Chipotle app and Chipotle.com to support The Trevor Project, the world’s largest suicide prevention and mental health organization for lesbian, gay, bisexual, transgender, queer, and questioning (LGBTQ) young people. More details in their press release, might be inspiration for other restaurants during their cities pride. The 26th edition of the Pride Amsterdam will be held from July 30 till August 7, with the Canal Parade on August 6.

They’re back | Zaxby’s Fried Pickles are here to stay

Zaxby’s, the premium quick-service restaurant known for its Chicken Fingerz™, wings and signature sauces, is celebrating the return of its beloved Fried Pickles. The Southern classic will be a permanent menu item going forward. Zaxby’s Fried Pickles are available systemwide as a stand-alone snack or as an add-on to complement one of Zaxby’s fan-favorite meals and sandwiches like the new Signature Club Sandwich with bacon and cheese. More in their press release, link in the title. We published this link because we keep spotting the Fried Pickles, which might be a fun plus at fast food creations. We once tasted them and loved it!

Nobu Hospitality continues strategic European expansion with announcement of Nobu Hotel Madrid

Nobu Hospitality, the leading luxury lifestyle and iconic hotel and dining brand, announces today its fifth Spanish hotel and restaurant in the elegant capital city of Madrid. Centrally positioned in the heart of the Spanish capital’s Cortes District, Nobu Hotel Madrid will see the transformation of an existing office building, located at 26 Calle Alcalá, between Plaza de Cibeles and Puerta del Sol. The hotel will offer a tri-level Nobu restaurant and bar, an expansive rooftop bar, and a lounge with views over the skyline together with a state-of-the-art fitness centre and spa. The restaurant will be reimagined by the renowned Californian architectural/design group, Studio PCH, led by Severine Tatangelo. Studio PCH has designed multiple Nobu properties including the highly acclaimed Nobu Malibu and the Nobu Hotel San Sebastián, opening in 2023.

Nobu Hospitality is entering into a long-term agreement with Millenium Hospitality Real Estate SOCIMI (“MHRE”) to develop Nobu Hotel Madrid, their second project following the recent announcement of Nobu Hotel and Restaurant San Sebastián. MHRE has an impressive collection of five-star hotels spread throughout Spain and Portugal.

New on the Dutch market | Santa Ana Gin

The Filipino brand Santa Ana Gin is now available on the Dutch market. It is exclusively imported by André Kerstens in The Hague (link in title). The name and the design of the bottle are a tribute to the Santa Ana Cabaret from the twenties. The bottle has an art deco design. It’s a transparent gin and is made with Filipino botanical ingredients via distillation under partial vacuum. This technique makes it possible to extract a concentration of botanical aromas. These are typical Filipino aromas: Ylang-Ylang and Alpinia. These aromas provide delicate floral prominent notes, with additional Calamansi and Dalandan for a soft and tropical citrus effect. The gin is suitable for drinking straight, but also for use in cocktails.

Mijenta introduces its sustainable slow tequila in the Netherlands

Mijenta, the award-winning and small-scale tequila brand from the Mexican highlands of Jalisco, presents Mijenta Tequila Blanco and Mijenta Tequila Reposado to the Netherlands. The brand is committed to sustainable production that takes into account the land and the local population.

Mijenta Tequila Blanco is an aromatic, complex and silky tequila with a long finish and fragrances of vanilla, caramel, tropical fruit, cinnamon and other spices. On the palate, honey, vanilla, caramel, fresh fruit and spices emerge. The Reposado matures for six months in American and French oak and French acacia giving the tequila a full body and hints of bergamot, honey, dried fruit, orange blossom and cocoa.

Mijenta Tequila Blanco and Mijenta Tequila Reposado are available at Soho House and Entourage Group catering outlets, cocktail bar Flying Dutchmen in Amsterdam, shops Sterk Amsterdam, BarrelProof Boutique in Rotterdam and De Gouden Ton. Mijenta is available online at DrankDozijn.nl and Caneandgrain.nl.
