As the holiday season approach, the Japanese sake brewery Shichiken is, in collaboration with Belgian importer Kaori, bringing a sparkling surprise: ‘sparkling sake’. Sparkling sake has been appreciated in Japan for some time, but is still relatively unknown in our country. This refined and tempting alternative to champagne is increasingly being put on the menu by sommeliers of gastronomic restaurants and is rapidly gaining popularity. Shichiken Brewery, with a rich history dating back to 1750, introduces sparkling sake to Belgium as an accessible and delicious discovery for sake enthusiasts and newcomers alike. Fizzy or sparkling sake offer a lush and refined experience reminiscent of champagne. This is an excellent opportunity to get to know sake in an accessible way and to enrich your festive moments with a Japanese flair. This fizzy sake is not enriched with CO2 gas, but the result of second fermentation in the bottle and disgorging: pearls of craftsmanship, made according to the méthode traditionnelle. Sparkling sake is a great choice for gourmets

Not only is bubbly sake an exciting option for the general public, but it has also attracted the attention of many leading restaurants and their sommeliers. More and more fine dining establishments are embracing this sparkling treat as a great addition to their menus. After all, there is a range of different types of sparkling sake within the Shichiken range. For example, Shichiken brews its sake with the same water that Suntory uses for its famous Hakushu whisky. Fun fact: Shichiken and Suntory are within walking distance of each other. In addition, Shichiken matured one of its fizzy sakes in Suntory whiskey barrels. The collaboration resulted in “Mori no Kanade”, a premium sparkling sake with a complex aroma that puts an emphasis on maple syrup and vanilla.
