A new twist of a French specialty: the ice cream macaron! Otelli introduces these ice cream macarons in two flavours, mango-passion and raspberry during the Horecava in Amsterdam.

The ice cream macarons are made locally

The ice cream macarons by Otelli, producer of ice cream and patisserie specialties, are prepared in the Netherlands. At Otelli in Haarlem, the French almond macarons are baked. The macarons are filled with ice cream made from organic milk, pasteurized at a farm in the Haarlemmerliede. A swirl of mango-passion sorbet or raspberry sorbet is added to the ice cream. The macarons are 8 cm in diameter and served in a nice packaging with Parisian drawings.

These trendy ice cream macarons can be used as dessert or be served as a to go snack. Otelli offers a wide range of homemade ice creams, mono desserts, petit fours, tarts and dessert buffets. All products are made with real cream and butter, pure nut pastes, couverture and fresh fruit.

BuzzBar developed alcoholic ice creams for adults

BuzzBar has designed various ice cream bars specifically for adults. The ice contains liquor and only natural ingredients. They also produce ice cream bars that are suitable for vegetarians.

BuzzBar as an alternative for the cocktail

The average ice cream bar contains about 2 percent alcohol, so you won’t get really drunk, but it could be a great alternative for a cocktail in the summer. The ice cream bars and popsicles come in a lot of different flavours, some examples are: Mojito, raspberry and lemon sorbet with lemon vodka, whiskey and chocolate, strawberries with rum and vanilla combined with cognac.

Slow-melting ice cream

Scottish scientists have discovered a new natural protein, BslA (Biofilm surface level A) that makes ice cream more resistant to melting.

The advantage of slow-melting ice cream

This new discovery allows us to eat ice cream in a relaxed way without getting sticky fingers, even on hot summer days. In a study conducted by a joint team from the University of Dundee and the University of Edinburgh, researchers have discovered this naturally-occurring protein. When added to ice cream, BslA binds together the air, fat, and water in ice cream, making them more stable in a mixture. Next to that the BslA has more advantages. The protein also helps to prevent the formation of ice crystals, giving ice cream a smoother, finer texture. Because of the fact that ice cream with BslA binds better, it will be possible to make ice cream with less saturated fat and calories.

This protein could be useable in products as chocolate mousse as well as in mayonnaise, due to the fact that you can lower the amount of saturated fats. More important, the taste of the product isn’t influenced. The protein is now used in a Japanese breakfast dish called Natto, that is made of fermented soybeans.

Not yet for sale

The slow-melting ice cream will not be on the market within the next three to five years. But in 2020 we will probably all enjoy slow-melting ice cream!

Foodpairing with olive oil ice cream

Bertolli celebrated its 150 years with foodpairing on the store floor of Albert Heijn supermarket. Foodpairing with special preparations and surprising demo mobiles. Amongst others they served the first Italian caprese ice cream with Bertolli olive oil, tomato, mozzarella and basil prepared on a cold teppanyaki plate.

Ice cream without fat and only 99 calories

NIZO food research has produced a soft ice cream without fat. The unexpected creamy ice cream also contains 25% less sugar than other soft ice cream and contains only 99 kcal per 100 grams.

Properties of ice cream without fat

Regular ice cream has more than 160 kcal per 100 grams. The unhealthy characteristics are mostly caused by sugar and saturated fat. The reduction of these ingredients in ice cream normally have a negative effect on the texture and other properties. With the implementation of natural proteins, the creamy properties of fat and the body of sugar are replaced.

During Horecava NIZO was present with the ice without fat at the ‘Innovation Lab’ and recently they’ve published an introduction video of the product combined with an explanation of the company which was partly made during the event. The research center has been researching proteins for more than 60 years now and is focused on creating healthier foods based on vegetable and animal protein.

The Coco Superfood ice creams are made from coconut milk, which is lactose-free and vegan. In May Haagen-Dazs will introduce two special ice cream flavors in Japan. The ice cream brand comes with the surprising flavors carrot-orange and cherry-tomato. These ice creams contain only 8.5 percent milk fat and are a lot healthier. We already know juices with the flavor carrot-orange so why not ice cream? With these flavors the brand responds to the current hype of healthy food.
