Amsterdam has a new culinary experience. Chef Julius Nuiten, known from the Michelin-starred Bistro de la Mer, is joining forces with the Chin Chin Club on Amsterdam’s Rozengracht. Together they are creating Le Souterrain: a place where you don’t just come to eat, but to experience a complete evening. From the first course to the last beat. From table to dance floor.

Le Souterrain | From restaurant to nightclub

Le Souterrain is located in the Chin Chin Club and combines contemporary gastronomy with live entertainment and nightlife. During dinner, the courses are interspersed with performances. The entertainment is not a separate programme before or after the meal, but woven into the course of the evening. On Thursdays, gastronomy and magic take centre stage, while Fridays and Saturdays are dedicated to an evening full of music, entertainment and dancing. On all three evenings, the restaurant turns into a nightclub at around 11 pm.

A new culinary direction for Julius Nuiten

“After almost eight years at Group 212, I wanted to chart my own course. At Le Souterrain, I have the freedom to further develop my own culinary signature and to work with different flavours and ingredients. What I find special about Le Souterrain is that it’s not only about what’s on the plate, but about the whole evening. Dinner stands on its own, but at the same time it is the start of an evening full of music and entertainment,” says Nuiten.

Where Nuiten spent years focusing on fish dishes at Bistro de la Mer, at Le Souterrain he has opted for a broader culinary signature, in which vegetables, fish and meat all play a prominent role. His cuisine is contemporary and international, with classic French techniques as a starting point and influences from different parts of the world. The à la carte menu ranges from sweet potato preparations with a roasted garlic and horseradish vinaigrette to A5 wagyu with jus. With this, Nuiten demonstrates the versatility of his new culinary direction.

Changing shows and live entertainment

On Thursdays, Le Souterrain is all about Diamonds After Dark, an evening where magic, glamour and mystery come together. Between courses, guests are surprised with illusions, acrobatics, live singing and dance, with a leading role for Nigel Otermans, Dutch champion of illusionism. The performances take place throughout the space, so the entertainment unfolds not only on stage, but also among the guests.

On Fridays and Saturdays, Queen of Hearts – Chin Chin Goes Vegas takes centre stage, a show inspired by the extravagance of Las Vegas. Gold, neon and red velvet form the backdrop for live performances and theatrical surprises that add an extra dimension to the evening. The entertainment is provided by She Moves Agency, led by founder and Creative/Movement Director Thaynah Rodrigues. As the evening progresses, the intimate dinner atmosphere makes way for an energetic setting. Around 11 pm, the tables and chairs disappear and the Chin Chin Club takes over.

Interior inspired by the nocturnal allure of London and Paris

The interior of Le Souterrain, too, has been designed with the transition from restaurant to nightlife in mind. Lisa Boissevain of Investerior was responsible for the design and drew inspiration from the exclusive, underground dining and burlesque clubs of London and Paris. Boissevain translated this inspiration into a contemporary interior with subtle Asian influences. Dark walnut, aged brass and deep red velvet create a warm, intimate and luxurious look and feel.

With Le Souterrain, Julius Nuiten and the Chin Chin Club at Rozengracht 133 in Amsterdam are creating a place where gastronomy and nightlife are no longer two separate worlds, but together form one continuous experience.
