Soenil Bahadoer created a dish based on Holi Phagwa, the Hindu spring festival. Like the ‘Festival of colours runs’ he creates his dish ‘scallop – pumpkin – Madame Jeanette’ with flying colours. Patrick Meis made the above video.

Masterchef Soenil Bahadoer, chef and owner of Restaurant ‘De Lindehof’ in Nuenen (The Netherlands), has a Surinamese Hindustani background. You can find his culture reflected in the taste, smell and colours of his dishes. In 2014 restaurant De Lindehof got a 2nd Michelin star. Michelin about De Lindehof “De Lindehof has an eclectic style. The dishes have bite and entice with intense flavours. A wonderfully exotic experience deserving a second star.”

The dish ‘scallop – pumpkin – Madame Jeanette’ is inspired by the Holi Phagwa, the Hindu spring festival. This holiday marks the new year and coincides with the beginning of spring in the northern hemisphere. People sing and dance, sprinkle each other with coloured powder. This symbolizes equality, without distinction between ranks, poverty and wealth. In these times, a nice thought. Patrick Meis made the video.
