At FLATONS, every dish is a crossroads

Chef Sandip Patel discovered his calling in the kitchen a few years ago and has since built up experience as a chef and restaurant manager. Chef Faeiq Al Mamoori, who ran his own supermarket in Iraq for many years, moved to Belgium in 2016 and found his way into hospitality through the kitchen of a care home, followed by professional chef training and years of experience as a sous chef. Together, they are now realising their dream of running their own place, in an interior featuring the natural signature style of sponsor Gommaire.

FLATONS without borders

Besides being a restaurant, this venue also serves as a training ground for refugees. Each intake takes on 10 to 15 people, including individuals from Ukraine with temporary residency status. The training programme, which includes a volunteer allowance, lasts several months and aims to offer participants long-term opportunities for employment with permanent contracts or their own business.

Street food and fine dining

FLATONS consists of two levels. Downstairs offers an accessible street food experience, open to all without reservation, inspired by the market stalls of the chefs’ home countries. Upstairs is an intimate fine dining space with seating for 25 guests, open daily from 6pm to 11pm (except Mondays and Tuesdays), by reservation only.

The menu | The ‘Peace on the plate’ principle

The menu is predominantly vegetarian, sometimes vegan, and changes every two months. On the fine dining menu, the chefs follow the “Peace On The Plate” principle: dishes from regions currently facing serious conflict, such as a lamb stew with green herbs from Iraq and Iran, or a borscht that references the war between Ukraine and Russia. In this way, attention stays focused on those conflicts, while the chefs above all show that food connects people, regardless of borders or politics.

A social, artistic and culinary project full of surprises

The name FLATONS is itself a story: an acronym made up of the names of everyone who helped make the project possible along the way. FLATONS aims to be more than just a restaurant: it is set up as a living platform, featuring changing contributions from guests from the art world, through exhibitions, talks, performances and unexpected collaborations.
