ProVeg launched ‘Future Plates’ | A catering guide to inspire more plant-based meals at global events
Last month, ProVeg International released Future Plates, a new catering guide designed to help large-scale events offer more plant-based food options. Launched during the UN’s climate conference in Bonn, the guide includes best practices, inspiring case studies, and flavourful recipes like jackfruit tuna salad, shepherd’s pie, chickpea curry, French bean casserole, and more.

Future Plates shows caterers how and why to offer healthier, more sustainable menus
Following the example of the Paris Olympics, COP28, and even the City of New York, this Future Plates guide makes it easier for others to do the same. Although the guide by Proveg International is aimed primarily at UN event caterers, the content is valuable for all organizers of large gatherings. At the Bonn June Climate Meetings, the guide’s impact was already visible: 57% of the hot lunch options were vegan, and 14% vegetarian. Snacks followed suit with 37% vegan and 46% vegetarian offerings.
“Many of us leave big events with unforgettable memories—but the food often leaves much to be desired, especially in terms of sustainability,” said Jasmijn de Boo, Global CEO of ProVeg International. “With this guide, it’s easier for caterers to deliver meals that are climate-friendly, healthy, and tasty. We hope it will be useful for COP30 in Brazil.”
Catering guide with topics like the economic benefits
The guide outlines not only health and environmental benefits, but also economic advantages. Plant-based ingredients, like legumes, vegetables, and grains, are often more affordable than meat, which requires more land, water, and resources. By increasing the number of plant-based dishes on a menu, caterers can significantly reduce costs.
“Promoting sustainable catering at global events is an easy first step to showcase the benefits of plant-based diets to a wide audience,” said Lana Weidgenant, ProVeg’s Senior UN Policy Manager. “Institutions like the UN, which back plant-based science, can lead by example—starting with the meals they serve at events like COP30 in Brazil.”
