Every day we spot fun, new concepts. This week a creative breakfast, lunch and coffee concept in Breda: DILEMMA Kitchen, another new smash burger concept this time from the THE BUTCHER chain in Amsterdam and a new location of the Sojubar at the Westfield Mall of The Netherlands in Leidschendam.

DILEMMA Kitchen by Emma Hopstaken opened in Breda in January, she provides private dining, catering, pasta workshops and breakfast and lunch on Friday and the weekends. The Sojubar in the Mall opened last week, they serve K-food and drinks (possibly a cocktail with Soju). And THE BUTCHER Smashed Burger is the chain’s first outlet where they specialise in the trendy smash burgers. This location will open its doors on April 28th on the Albert Cuypstraat!

DILEMMA Kitchen on the Nieuwe Haagdijk in Breda

January 2025 Emma Hopstaken started DILEMMA Kitchen in Breda. At this location she welcomes her guests on Fridays, Saturdays and Sundays for breakfast, lunch, coffee and treats, and all other days of the week Emma is busy with catering, as well as private dining and intimate pasta workshops in style. She has created a space at 40 Nieuwe Haagdijk that is infused with a charming mix of Italian modern flair and a warm, homely ambience.

Emma is creatively and aesthetically minded, the latter learned in part during her studies at the Royal Academy in The Hague towards Fashion Photography. In addition, she has had a passion for food from an early age; beautiful and delicious food. Chefs such as Nigella Lawson, Jamie Olivier and the Italian cuisine are her inspiration. The Italian cuisine is very much part of her concept, as can be found in her intimate pasta workshops. She often creates distinct, custom-made styling for her catering, private dining and workshop events. For a few years now, she has been collecting unique items she finds in thrift shops to give her tables extra flair.

Seasonal produce is used at DILEMMA to bring out the best quality and flavour of the moment. In summer, most of her produce comes from her mother’s vegetable garden. Besides, almost everything is homemade, right down to the ricotta. More information on her website, link in the title.

 Smashed to perfection burgers at THE BUTCHER Smashed Burger

Since 2012, THE BUTCHER has shaken up Amsterdam with its legendary haute fast food, meanwhile THE ENTOURAGE GROUP already has 5 locations in Amsterdam as well as locations in The Hague, London and Manchester. Known for Amsterdam’s best bloody burgers, the iconic burger concept is now expanding with a brand new concept: THE BUTCHER Smashed Burger. It promises to be the place for anyone who loves a crispy, juicy burger, with THE BUTCHER’s unmistakable style.

Located in the heart of the bustling Pijp area, owner and co-founder Yossi Eliyahoo is opening a spot that revolves around just one thing: Smashed perfection. At the new location, the burger is not just twisted but smashed, for extra crunch, juiciness and an explosion of flavour. No fuss, no menu clutter – just smashed burgers, with a choice of single, double or triple smash, with or without cheese, and of course as a veg(n) version.

The trend of smash burgers has been around for a while and now at THE BUTCHER too. The advantage is that you can enjoy your burger with THE BUTCHER’s beloved sides such as popcorn chicken, chicken tenders and chicken wings.  Sojubar now also has a location in Leidschendam in The Mall of the Netherlands

Enjoy Korean Fried Chicken with a beer or with cocktails made with Soju. Sojubar now has 7 locations in the Netherlands and locations in Antwerp, Düsseldorf and in Istanbul Kadiköy. At all locations, you can enjoy K-food with dishes such as Korean Fried Chicken (Soju OG, Onion Lover, Sticky Cheese, Honey Butter, Soju Gangnam Style, Garlic Soy) and Kimbap and Mandu dumplings, among others. And for desserts, large portions of Bingsu, shaved ice in various fruit flavours. Check out the menu on their website, link in the title.

You can accompany your dishes with a beer, mocktail or cocktails all made with Soju, the Korean drink. Soju is Korea’s national drink – a clear, colourless spirit. Traditionally made from rice, it can also be made from other grains such as wheat, barley or sweet potato. It has an alcohol content of between 12% and 21%. The taste of Soju is often described as clean, neutral and slightly sweet.

We enjoyed the Kimbap and the Korean Fried Chicken Honey Butter and Garlic Soy. And the dessert, a strawberry Bingsu, was also delicious! Westfield The Mall of the Netherlands has a cosy new restaurant!
