Opening – On 15 April 2023, entrepreneurs Jouke de Bruin and Jasper Borggreven opened their Vineria NEBBIOLO in Baarn. With a range of 450 only Italian wines, the wine bar is unique for the Netherlands. The establishment is also distinguished by its beautiful designed interior and their Italian cuisine with creative homemade snacks and dishes.

Fixed surcharge for the wines at Vineria NEBBIOLO

Vineria NEBBIOLO is the result of collaboration between wine specialist Jouke de Bruin of Italian wine shop NEBBIOLO Premium Italian Wines in Baarn and hospitality entrepreneur Jasper Borggreven of Italian restaurant Cosa in Baarn and Naarden. Jouke de Bruin (47): “Our love for Italy comes together in our wine bar, which is like a hidden gem between our two businesses. With a selection of no less than 450 strictly Italian wines ranging from Trentino-Alto Adige in the north to the island of Sicily, we are unique in the Netherlands as a wine bar. By charging a fixed surcharge of €15 per bottle on top of the retail price, the wines remain affordable. This also allows guests to drink higher-end wines at a reasonable price.”

Background in the hospitality industry

Both entrepreneurs have a background in the hospitality industry. Before starting Italian restaurant Cosa, 45-year-old Jasper Borggreven gave hotel-restaurant Promenade in Baarn a successful second life. Jouke de Bruin was previously sommelier and manager at estate de Salentein in Nijkerk and at star restaurants such as Mariënhof in Amersfoort, Kasteel Heemstede in Houten, ‘t Amsterdammertje in Loenen aan de Vecht and Ron Gastrobar in Amsterdam.

Creative Italian snacks and dishes

From the huge range of quality Italian wines, 25 wines will be served by the glass. In addition, wine lovers can enjoy refined and creative appetizers and dishes from Italian cuisine made in house. The menu includes vegetarian items such as red-leaf salad, pear and gorgonzola cream and delicacies from the sea such as oysters with a cream of burrata and granita spritz and sea bass tartare with capers and lemon. Besides à la minute sliced meats and cheeses, there are elegant pizzette (small pizzas) and, as a ‘dolce’, they also offer cannoli with mascarpone, orange and pistachio. Prices start at €4 for a bite and €12 for a dish. Jasper Borggreven: “For a complete experience, we also offer a ‘High wine’, consisting of a sparkling aperitif, bread, mineral water and three dishes with matching wines for €47.50 per person.”

Hundreds of floating bottles in the interior of Vineria NEBBIOLO

The interior designed by Bart van Rooy of BigVis breathes the atmosphere of a ‘hidden bar’. Among other things, the black ceiling has created an intimate space, with the eye-catchers being the hundreds of wine bottles on the wall that seem to be floating. The beautiful black and white painted floor also catches the eye, as does the green bar with its marble top. Jouke de Bruin: “On the bottom of the walls, we made space for bottles that guests have drunk, which can be kept there as a lasting reminder of unique moments, provided with their personal message if desired.”

Wine Cathedral

The new partners are proud of their business. “We have been open for a few weeks now and the response has been very enthusiastic. Many guests are surprised and praise the combination of wine, committed hospitality and a beautiful interior. One of them even called it a wine cathedral, which we consider an apt description and a great compliment,” Jasper Borggreven and Jouke de Bruin said.

Vineria NEBBIOLO is located on Amalialaan 1 in Baarn and accessible from the restaurant Cosa, also located at that address. The wine bar is also accessible through wine shop NEBBIOLO on Nieuwsstraat 31 during the times the shop is open. The wine bar can accommodate 32 guests and is air-conditioned. The space can also be used for private meetings, tastings and wine courses.
