Circular bread made by the Top Bakkers Group on the menu at caterer Vitam

Vitam, a pioneer in healthy and sustainable eating, is introducing circular bread as the first large-scale caterer. The Top Bakkers Group developed a bake-off multigrain roll, 30% of whose dough consists of ingredients from returned bread of the previous day. The leftover bread is converted into breadcrumbs, fermented, and then reused as sourdough in fresh dough. This results in a nutritious 70-gram roll with 4.9 grams of fiber per 100 grams, saving both raw materials and CO₂. After successful tastings, Vitam will now introduce this bread starting October 27, a significant step toward its CSR (Corporate Social Responsibility) goals for 2030.
