Since 10 March 2022, Maastricht has been home to a trendy and special patisserie shop and ice cream parlour. Servais Tielman of Michelin-starred restaurant Beluga Loves You and his partners opened ‘Smullies Maastricht’, a unique and trendy shop with unique ice cream flavours, exceptional patisserie, smoothies, milkshakes and coffee. Smullies is located at Frankenstraat 198 and has a striking interior in pastel pink colours and gold. In May 2022 the second branch will open in the new Foodchurch in the Boschstraat in Maastricht.

A trendy new address to go to when you go to the most touristic city in the south of the Netherlands, Maastricht! Here you can enjoy a cup of slow roast coffee with a Big Boy Macaron from the Michelin-starred restaurant Beluga Loves You or an éclair or madeleines or….. Or ‘just’ an ice cream: the pink ruby chocolate ice cream with raspberry and rose water sounds delicious, right?

Love for the ‘Big Boy Macaron by Beluga Loves You’ start of Smullies Maastricht

The shop is located on the Groene Loper, the tree-lined boulevard that was created after the construction of the tunneled A2 motorway in Maastricht. Smullies was born from an idea of 25-year-old Jonathan van Kleij, who worked at restaurant Beluga Loves You (BLY) during his studies at the Maastricht Hotel Management School. His love for BLY’s ‘Big Boy Macaron’ led him to set up a macaron shop as a business case for his final thesis. Servais and Stephanie Tielman were enthusiastic and when Loes Cordewener – the partner of financial advisor to the BLY group Guido Mulder – indicated that she would like to open an ice cream shop, Smullies was born.

Servais Tielman: “Since the opening, we have made a flying start with many enthusiastic reactions and queues at the door. The changing assortment is made according to traditional methods from top-quality ingredients. Besides the famous ‘Big Boy Macaron’ that started it all, there is a selection of pastries such as eclairs, madeleines, luxury pastries, cakes and bonbons. All small works of art and a feast for the eyes. The daily management of Smullies is in the hands of Jonathan van Kleij and Loes Cordewener. My focus remains with my restaurants BLY and Flavourz by Servais. At Smullies I take care of the culinary input, such as thinking up flavours and creating new delicacies. I do that together with the chef-patissier of Smullies, Carlo Lennarts.”

The ice cream assortment offers around 20 different flavours. Jonathan van Kleij: “In addition to traditional flavours such as vanilla and chocolate, there are also changing specials. During the opening weeks, we received enthusiastic reactions to the pink ruby chocolate with raspberry and rose water, to the caramelized white chocolate with rosemary and to the salted popcorn ice cream. The milkshakes are also distinctive. Many people ordered the shake with Oreo biscuits and chocolate. We work together with ice cream master Eric Gadema. He brings in his expertise, devises the flavours of our specials together with Servais and takes care of the ice cream production.”

The colours chosen for the interior are pastel pink and gold. Loes Cordewener: “These shades match perfectly with the colourful patisserie and ice-cream products, you literally feel like a kid in the sweet shop here. The original terrazzo floor combines beautifully with the pink and gold tones, and the large white lamps above the counters are real eye-catchers. Luuk Jaspers designed our house style, incorporating the pink and marble tiles of the terrazzo floor.

We serve slow roast coffee from Mocca d’Or. The coffee specials also change regularly and in the summer there are combinations with ice cream. There are also delicious smoothies made from fruit and vegetables. Drinks and ice cream are served in beautiful recyclable cups. And soon we will have an ice cream bicycle, with which we will also be able to sell ice cream outdoors. In May 2022 Smullies will get a second establishment in the new Foodchurch in the Boschstraat in Maastricht. There we will mainly sell ice cream and patisserie.”
