Trends we spotted | Week 33

20-8-2021

At horecatrends.com or hospitalitytrends.eu we spot many national and international trends on a daily basis. We pick the most interesting ones to write about, the other trends we use in our weekly column ‘Trends we spotted this week’.

With this week links to articles about the most spectacular off-menu dish at the rule-breaking Japanese restaurant Shuko in New York and to the ‘Cuisine Solaire’ by restaurant Le Présage in Marseille. It’s Europe’s first solar-powered restaurant.

In London you can enjoy cocktails and high tea’s at a disused train station, check out the great 1940s themed high tea video at Cahoots Underground in the article. Also opened in London: a new immersive cocktail experience, Mr. Tipsy’s Down The Hatch! With a lot of OTT-ness!

French food tech start-up Gourmey is working on lab-grown foie gras that could allow restaurants to continue to serve the highly-prized delicacy in an ethical way. Great news for foie gras lovers, it looks like it and the chef who tried it says it also tasted the same.

The new pizzeria Pazzi in Paris is staffed entirely by robots, from order-taking to prepping the dough to putting the pizzas in boxes. Check out the video, as guests you can follow your pizza being made!

We love the idea behind the ‘random acts of kindness’, as does Domino’s Pizza in the USA, they started their ‘Surprise Frees’ Promotion. Until November 21, 2021, they are surprising randomly selected fans with free menu items.

And a link to an article about the new ‘Taco Bell Defy’. The 3,000 square-foot restaurant concept located in Brooklyn Park, Minnesota, utilizes a two-story model for “the frictionless future of Taco Bell”.

Disclaimer: this article is more interesting for Dutchies and those living in Belgium.

Opening in Antwerp – With MOOY Bakery, the popular pink lunch spot ‘MOOY Food & Drinks’ is introducing a completely new concept across the street from the current store. Here they serve milkshakes, cupcakes, cake slices and fancy sweet & savory toasts! All sweet tooths can gather here! Owner Yana Lamon starts with one establishment, with the aim of being able to expand it later or even develop it as a franchise concept. The stairway to sweet treat heaven? You can climb it from this summer at the Lombardenvest 33 in Antwerp.

Looking at the images, the concept reminds us a bit of the very popular and Instagrammable EL&N cafes in London. And if MOOY Bakery will be as busy as this chain is in London, it can expand quickly! Nice to visit if you go shopping with friends in Antwerp. The cake slices look deliciously sweet!

Celebrating Easter with smaller, luxurious treats

23-3-2021

  • The Chick Buns from the Bun House in London
  • The 'COKIP-19' by Patisserie de Rouw
Two examples, one  from the Bun House, a Cantonese-style steamed bun specialist in London and one from Patisserie de Rouw in Vught (the Netherlands). The Bun House will be launching their limited-edition ‘Easter Chick bun’ set to celebrate Easter. Available from the 26th of March to the 4th April, the delicately shaped buns will be available in-store at Bun House’s Chinatown home and for delivery to doorsteps across the country. But we also spotted the Easter chicks, COKIP-19, by the Dutch Patisserie de Rouw. They’re wearing a Covid proof mask! Check out all their images!

Great is that both examples are fairly small treats. As Arthur de Rouw points out in his press release, the new Easter items are somewhat smaller in size, which is in line with a number of trends he spotted in the pastry world and which are partly caused by the corona crisis. According to him, it is the smaller, luxurious indulgences that colours our lives.
