Taiko Cuisine, the restaurant at Amsterdam’s Conservatorium Hotel, named ‘Best Asian Restaurant 2023’ by Gault&Millau, launched its ingredient of the year on October 30th: rice. Inspired by the Chinese New Year, Taiko Cuisine annually celebrates its birthday with a ‘Taiko New Year’.  On this occasion, chef Schilo van Coevorden always presents a product that he puts at the centre of his menu for a year. New ‘Taiko Ingredient of the Year’ | Do you know which one it will be?

Last year we wrote about ‘wasabi as Taiko Ingredient of the Year ‘. This year, Asian restaurant Taiko of the Conservatorium Hotel in Amsterdam will announce a new ingredient in combination with a contest in which several prizes can be won. Inspired by the Chinese calendar, Taiko celebrates its birthday on Monday the 18th of September 2017; ‘Taiko New Year’. This is also the moment where chef Schilo van Coevorden will announce the new ‘Taiko Ingredient of the Year’ and launches its brand new menu. Opening – This week, Mediterranean restaurant BARBOUNIA opened at the Conservatorium Hotel in  Amsterdam. The soft opening is until January 30th, guests dining at BARBOUNIA are paying reduced rates during this period. The restaurant takes its inspiration from three renowned culinary cultures: Italy, the French Riviera and Greece. Surrounding regions and cultures are also subtly featured. Located in the Conservatorium Hotel, in the middle of the Museum Quarter – the luxurious and cultural heart of the city – BARBOUNIA offers a unique setting. Conservatorium Hotel x Café Nol | Five-star Dutch ‘gezelligheid’ during Hotelnacht

Five-star Dutch gezelligheid (a word hard to describe but cosiness comes near) during the tenth edition of the Hotelnacht in Amsterdam, on 14 and 15 January 2023 at the Conservatorium Hotel in cooperation with Café Nol, the most famous café in the Jordaan neighbourhood in Amsterdam. For this ode to the capital’s nightlife, the hotel will transform its Taiko Bar into an Amsterdam pub. Hotelnacht visitors and hotel guests will enjoy Dutch hits, culminating in a performance by Café Nol’s regular folk singer. Chef Schilo van Coevorden will present his variation on the old Dutch bittergarnituur this evening: a langoustine frikandel with green curry and caviar, a wagyu beef frikandel and his award-winning cheese soufflé with black truffle. At the bar, too, guests briefly imagine themselves in the Jordaan with a cold glass of beer, a kopstootje or a special Jenever cocktail provided by the world’s oldest cocktail brand Lucas Bols (from Amsterdam).

As of yesterday you are able to buy the ‘starbox by Sjieke Snacks’. Here in the Netherlands we love our fried snacks, we call them our ‘brown fruit’ and love to eat them with a beer. The culinary snacks from Sjieke Snacks are special, created by chefs with Michelin stars. For the first edition, owner Marijn van Doorn, invited five Michelin-starred chefs from the Den Bosch area to share their culinary snacks. Resulting in a box with the ‘Driel mushroom croquette’, ‘Risolle Wagyu and tomasu’, the ‘Thom Kha Kai Kroket’, the ‘Balleke Vigor with foie’, ‘Chicken Corn Thai curry and shrimp’ and Marijn van Doorn’s own ‘Cheese Pata Souffle’. Who doesn’t like a good snack from time to time? That goes for most people, of course, including top chefs. Behind the scenes, they have always created the most delicious simple dishes and snacks for themselves and their loved ones. A few years ago, the first chefs came to the realization that many more people would like to taste this. Like chef Gavin Kaysen (*) who already served a late night greasy spoon at the bar in his first restaurant Spoon and Stable years ago, New York’s favorite chef David Chang (**) who started his own fried chicken brand, Chef Schilo van Coevorden of restaurant Taiko (*) in the Conservatorium Hotel in Amsterdam who in collaboration with Febo served the limited edition ‘langoustine frikandel’ or the Valuas croquettes and bitterballen of chef Eric Swaghoven which he has been selling since 2004. These chefs already set this trend back then, this article will continue after a few of these examples of “snackization” of the culinary world where we discuss the inspiration and initiatives that the corona period brought us.
