Early April 2026, Chez Chloé will open at Overtoom 28/30 in Amsterdam, a French-oriented fine-dining restaurant where classic gastronomy and modern refinement come together. Chef Marcelo Hernandez, maître Rutger Bogers, and entrepreneur Matthijs van Stapele create a culinary experience that combines refinement with accessibility. The interior feels warm and inviting thanks to soft lighting, rich materials, and a layout that radiates comfort and calm. With 54 covers, an extensive wine collection of over 250 French wines, and a focus on seasonal produce and local suppliers, Chez Chloé aims to become a sustainable and distinctive addition to the gastronomic scene in Amsterdam.

Chez Chloé | Burgundian comfort fine dining with a modern twist
Chez Chloé brings together classic French gastronomy with a modern signature. The dishes are recognizable yet surprising in execution. Think of confit halibut with a yuzu kosho sabayon, kohlrabi, and tarragon oil, or bavette tartare with a porcini sauce, black radish, and seaweed. Vegetarian dishes also have a prominent place on the menu, such as stuffed morels with mushroom parfait in cider sauce and a rouleau of turnip and hazelnut. The menu surpasses the level of a traditional bistro and moves toward gastronomic craftsmanship, where technique, flavor, and presentation come together. The kitchen works with seasonal products from farmers, local hunters, and suppliers such as Lindenhoff. The kitchen is led by chef Marcelo Hernandez, classically trained in French cuisine and born in Amsterdam. He is supported by sous-chefs Boris Sanders (Entrepot, Bolenius*) and Nathanael Lawton (MOS*, Foer). During the opening, the team will be advised by René Klop (Maloba, South Africa).
Wine as a common thread
Wine is inseparably linked to Chez Chloé. “Il faut vivre d’amour et de vin”, one must live on love and wine, is their guiding credo. The wine list offers a carefully curated selection of classics from renowned estates in Burgundy, Loire, Jura, Bordeaux, and Chablis, complemented by wines from a new generation of makers and pioneers in natural wine. Guests will find both iconic houses such as Domaine François Raveneau, as well as the contemporary signature of vigneron Jérôme Bretaudeau (Domaine de Bellevue). Sommelier Tim Palacios (among others CUE*) has compiled the list with great precision. The wines are presented in a transparent climate-controlled cabinet that occupies a prominent place in the restaurant. For true enthusiasts, there is also the Chloé Cave Privé booklet, featuring an exclusive selection from the house cellar, from iconic Super Tuscans to rare bottles of Pétrus.

Ambiance and comfortable luxury
The interior of Chez Chloé combines French flair with light, warm accents. Design studio Horeca Sfeermakers chose natural materials paired with semi-circular banquettes in soft green tones, gold-colored wall-filling climate cabinets, and white deep-red veined Italian marble as subtle markers of quality. The bar forms the heart of Chez Chloé: a place where guests can enjoy food and drinks in a relaxed way and that serves as the link between kitchen and restaurant. In summer, the ambiance extends to the terrace on the Overtoom, a refined spot to experience the city’s dynamics, while the moment at the table remains central.
