Wine Bar & Bistro Petit Caveau
Petit Caveau is located on Korenbeursplein, on the site previously occupied by Bar UNO vino & gusto. The interior, designed by the trio themselves, exudes a rustic and warm atmosphere, featuring wooden elements, subdued lighting and wine-inspired details such as barrels and a cork wall near the open kitchen. A true eye-catcher is the large tree-trunk communal table for ten guests, inviting convivial shared dining, which is also possible at the bar. In summer, the sunny terrace is an added attraction. Indoors, there is seating for 50 guests.
A distinctive wine bar and bistro
At Wine Bar & Bistro Petit Caveau, guests can enjoy a versatile culinary experience, ranging from a late lunch or (early) dinner to a fine glass of wine paired with refined bites. Its status as a fully-fledged wine bar is reflected in the carefully curated selection of at least ten wines by the glass and a Mediterranean-inspired wine list that is unique in Tiel. Twenty-six-year-old host and sommelier Camilo van Drumpt Sanstra highlights the venue’s distinctive character: “Enjoying a bottle of Meursault with a refined bite was simply not possible in Tiel until now. Many of our wines are personally imported from France by Edwin Muns, allowing guests to discover wines they won’t easily find elsewhere.”
The menu | Simplicity with power
In the open kitchen, 21-year-old head chef Olivier Landewers is at the helm. Petit Caveau’s culinary style can best be described as a minimalist yet refined bistro cuisine with Mediterranean influences. The dishes are honest, full of flavour and to the point. The blackboard menu features changing dishes such as steak tartare, fish with beurre blanc and chanterelles, steak with pepper sauce or a rich bisque.
“We also go all out for aperitif bites,” says the proud chef. “From eel with wasabi on brioche to oysters, risotto croquettes and padrón peppers. The platter of artisanal charcuterie and sausages from master butcher William Knobbout of Buren has already proven to be a firm favourite in just the first two weeks since opening.”
From talent to entrepreneurship
The foundation of Petit Caveau lies at Brasserie Poelzicht in Kapel-Avezaath, owned by Edwin Muns, where Olivier worked in the kitchen and Camilo served as host. Chef-owner Edwin Muns considers it his mission to give young talent the opportunity to realise their ideas through their own business. “I support them, but they run the operation and truly make it their own,” says Muns.
