Until the end of August, a pop-up ‘Plant Based Sushi’ restaurant is open on the 3rd floor at De Ruimte in Amsterdam North (Distelweg 83). The sushi they serve is far from boring. How does miso-marinated tofu with bimi and onion jam sound? Or grilled eggplant with berry rice?

Plant based Sushi

The concept is very straight forward, 26 euros for 20 pieces of sushi; there is no menu but they simply serve whatever the chef is making that day, meaning that only the freshest vegetables are used each day. During the evening Plant Based Sushi will be served and there are usually 10 different types of sushi which are served in 2 rounds and 2 pieces of each type of sushi. So 20 pieces in total. Not only are the rolls different throughout the evening but each night showcases a different menu. The menu is complemented with different varieties of craft beers, wine, Japanese whiskies and sake.

It is best to make a reservation which can be done through their Facebook. Buying a ticket online before the evening ensures you will have a seat at the dinner table. Check out their Facebook page for more details.
