Around the fondue tree ….

29-10-2015

The Kapellerput brings a winter habit to the Netherlands. They went to France for inspiration and came back with an alternative ‘break’ during meetings, cheese fondue. You can do this around a fondue tree, a bar table with space for a bottle of wine, glasses and a fondue pot. The fondue tree can also be used at parties of course.

De l’arbre à fondue or the fondue tree

Maybe you already know the l’arbre à fondue, it originates from Switzerland and is used by restaurants and hotels located in winter sports regions, since a few years. The fondue tree is easy to move, enabling the service of a cosy cheese fondue at any place you like. Watch a promotional video from 2011 ….

About the Kapellerput

The Kapellerput is located in Heeze. The green estate is an inspiring place where a lot of meetings take place, particularly in their Kaban (tree house) and the home of (meeting in the relaxed atmosphere of a living room). They also have an innovative space, #Renewal, with all sorts of products that stimulate creativity. You can even create a pop-up meeting in the forest. Their new ‘break’-concept around the fondue tree combines incredibly well with the meeting concepts they offer. Let’s hope for cold but sunny weather during meetings at the Kapellerput this winter!

A cloud of alcoholic cocktails!

23-10-2015

Bompas & Parr’s ‘alcoholic architecture’ is a pop-up cocktail bar in London’s famous ‘foodie centre’, the Borough Market. In this bar visitors can literally stand in a cloud of alcoholic cocktails.

Bompas & Parr’s pop-up

Up to and including January 2016 Bompas & Parr’s ‘alcoholic archtecture’ will be open for visitors in the Borough Market. In an enclosed area, the air is moistened with a mixture of spirits. Examples of the ‘served’ drinks are the liqueurs Chartreuse and Benedictine, a Trappist beer and fortified alcoholic wine, the notorious Buckfast.

Cloud of alcoholic cocktails

Visitors have to get in a rain suit at the entrance, and then they literally step into a cloud of alcoholic cocktails. The alcohol will be absorbed into the body through the lungs and eyes. This is exactly the reason for the signs ‘breathe responsibly’. The bar is only accessible for 18 years and older.

‘British Museum of Food’ (BMoF)

In the same building as the pop-up store ‘The British Museum of Food’ will be open for visitors from 21 October. This museum will be world’s first cultural institution which is entirely devoted to the history, evolution, science, sociology and the art of food. Some of the museum pieces are: The world’s fastest cheese trolley (from 0 to 62 mph in 6.6 seconds), the first space coffee (brought to 37 km altitude and back) and the first barbecue on 2.100 °C melted lava.

Amazon free take-out delivery

Amazon starts with one hour free take-out delivery for premium members in Seattle.

Free take-out delivery

Online retailer Amazon.com Inc. has begun a free take-out delivery service. Amazon Prime members get free delivery on their take-out orders from dozens of outlets and receive them within the hour. The Amazon Prime service costs $ 99 per year.

Delivery of beer, wine and spirits

A few weeks ago Amazon already announced that they began with one-hour delivery of beer, wine and spirits in Seattle. The city is the only place in America where customers can order beer and spirits via fast mail-order. In the rest of the country the delivery is limited to wine. Amazon offers a fast delivery service for alcohol in London already.

Growth of the delivery market

With the rapid deliveries Amazon wants to compete with restaurant delivery parties like GrubHub. The American GrubHub is comparable to the Dutch ‘Thuisbezorgd.nl’. The company delivers take-out meals from 30,000 local restaurants and has customers in 800 American cities. Americans spend an estimated 70 billion dollar on takeaway and delivery meals in 2013. With such numbers offering a one hour delivery service for take-out pays off. In March 2015, total sales in restaurants and bars was higher than the grocery market (!) for the first time. With the expansion of the delivery market, restaurants can increase sales at peak times, without adding extra seats.

Game workshop by Nestlé Professional and Sligro

14-9-2015

Nestlé Professional and Sligro put Dutch game on the menu with a wild harvesting and game workshop for chefs.

Game workshop by Nestlé Professional and Sligro

Sligro Food and Nestlé Professional have joined forces to let chefs discover the possibilities and culinary variations with Dutch wild boar. Recently eleven chefs from restaurants throughout the Netherlands got inspired during a wild harvesting workshop and wild clinic in Lingewaard. In addition, they were challenged to create combinations of wild boar and CHEF products. Game, and escpecially wild boar, gets more accessible by processing it and make for example a wild boar burger or hot dog with the meat.

Pulled Swine

“Game is the finest free-range meat there is. Guests often think that game tastes very strong, but that’s a misconception we would like to take away, “said Edwin Detering, culinary consultant at Nestlé Professional Food. “In addition, a local product such as Dutch wild boar now widely available. By putting accessible game dishes on the menu, the threshold for guests to discover new game is lowered. Think of a dish like a ‘pulled swine’ sandwich. ”

Edwin Florès

During the game clinic and wild harvesting workshop the chefs discovered the edible nature under the guidance of Edwin Florès, professional wild harvester and cookbook author. The score of the wild harvesting included wild mushrooms, fresh watercress and water mint. These were incorporated into the food from the game clinic.

Beautiful dishes from neck and shoulder

The chefs attended a deboning demonstration of a wild boar. It was explained how to prepare tasty dishes with the obsolescent parts. “The front part, including shoulder and neck, is used less frequently, but there are lovely dishes to be made of” Hein Willemsen, SVH Master Chef explains. “Through slow cooking at low temperature (sous-vide), the meat is very tender. A shoulder pad can be grilled after cooking and you can serve it with pasta and mushrooms. The neck piece can be cooked in a game sauce based on demi-glace. The taste of wild boar meat can be well combined with powerful sauces such as the CHEF red wine sauce or pepper sauce. A nice piece of meat such as a Dutch wild boar deserves to be combined with a high quality sauce or stock, like the products of the CHEF. ”

Deboning workshops

Earlier, we wrote about a deboning workshop for consumers by Gertjan Kiers at Julius Bar & Grill. A trend that we applaud to. Let us know if there are workshops like these organized in your neighbourhood or if you choose to organize one yourself.

The Vega Pop-up restaurant will be in Rotterdam in October

7-9-2015

From the first of October the Vega Pop-up restaurant will serve exclusively vegetarian and vegan dishes in their pop-up restaurant in Rotterdam for five days per week (Wednesday/Sunday). They will be in the ‘Westelijk Handelsterrein’ in Rotterdam for the entire month of October.

Why a Vega Pop-up restaurant?

Earlier we wrote about the initiative of, amongst others, Friedjof Kempenaar. They want to show the people in the Netherlands that the vegetarian kitchen is already far beyond the ‘Birkenstock’-image. They serve various small dishes to choose from the menu but you can also opt for a full evening menu. The dishes are served in the size of a ‘side dish’ so that you can taste even more … The wine list is vegan as well, which means that the wines are not filtered with the use of animal products.

Improve the image of the vegetarian and vegan cuisine

Vega Pop-up responds to the lack of good, but especially modern, vegetarian and vegan restaurants in the Netherlands. Through a variety of campaigns and food scandals, more and more people start eating ‘mindfully’ and sometimes even make the choice to eat vegetarian or vegan. At most restaurants the choice for these people is still poor. The Vega Pop-up is serving a trendy choice of vegan or vegetarian dishes and is having a cocktail bar and a DJ until the early hours on Friday and Saturday.

Great examples of small hospitable gestures at Cal Blay Vinticinc

  • Klein gastvrij gebaar 4b.

Cal Blay Vinticinc is located in a modernist winery from 1905 in the cava city Sant Sadurní d’Anoia and is showing us some great small hospitable gestures.

One of those days

At the end of our 2 weeks holiday in Barcelona, we brought one of our guests to the airport and decided to go to nearby Sant Sadurni d’Anoia to buy some cava to take home. And we had to lunch of course but didn’t check for an address… We ended up at the Cal Blay Vinticinc. It was one of those days you just stop at the right address…..

Entering the restaurant to check whether they had a table available they handed us a glass of cava before they went to find out. Wise, because we walked around in their shop while sipping cava…

Small hospitable gesture 1: pica-pica menu and tins

How often do you have problems choosing from the menu? With the Spanish tapas it’s already much easier to choose but Cal Blay offers a pica-pica menu; a couple of starters (snacks) to share with the table. Serving the tartare dishes in small tins. You can choose your own main course and dessert.

Small hospitable gesture 2: the game of the aromas of cava

Cal Blay presents a wide range of wines and cavas from Sant Sadurní d’Anoia to taste (120). The restaurant is all about the culture of wine and cava. Cal Blay tries to involve you in its pursuit of pleasure, combining the knowledge of traditional and new culinary trends. They invite you to play the game of the aromas of cava. At the table you will find 4 senses and instructions how to play the game.

Small hospitable gesture 3: wash your hands in cava

At the end of your dinner you will receive a bowl of hot water scented with cava and towel tablets.

Small hospitable gesture 4: invite your guests to share pictures on social media

Already in the wine store they invite you to use the ‘Photocall del cava’ to take photos in front of a cava wall while holding cava cushions. Which was used frequently by the young visitors of the restaurant.

Restaurant in Leiden with homely atmosphere

15-7-2015

The historic building ‘The Volharding’ at the harbour in Leiden in The Netherlands is the home base of homely restaurant ‘Lot & de Walvis’ since a few weeks now.

Homely atmosphere at restaurant in Leiden

The fictional tour of Lot and her van that was named ‘De Walvis’ (translated as The Whale) went through Southern Europe and South Africa and recently ended at the port of Leiden. At ‘Lot & de Walvis’ American Barn wood and authentic weathered materials are used, mostly gleaned together by co-owner Rob van Wijnen himself. In the opening week, neighbours were personally invited for a drink and 80 people attended the neighbourhood drink. Friends and residents got a 25% discount to have a taste of the food in the first week.

Nightmare

The walls are plastered and transformed from sleek and straight into coarse and wavy. It was a nightmare for the plasterer who was used to deliver plain walls, but the result feels very natural. The various areas are named after the various rooms as you would expect in someone’s house. By using the same tables and style both inside and outside, the various areas of ‘Lot & de Walvis’ feel as one. On the toilet hangs a sign “The toilet design is Lot’s next project”, indicating why this space is less connected to the rest of the restaurant and still needs a make-over.

Food and drink

The extensive menu provides the opportunity to have breakfast all day. In addition, there is a cacophony of categories with headings like ‘bites’, ‘sandwiches’, ‘soups’, ‘small dishes’, ‘homemade burgers’, ‘Lot’s favourite dishes’, ‘desserts’ etc. The fans of refreshing fruit water can eat their hearts out with complimentary glasses of water from three jars with for example fresh melon water, citrus water or lemongrass water. There are beers available from the local brewery Pronck Leiden, wine lovers can definitely enjoy themselves and trendy Gin and Tonic lovers are served as well.

The Hospitality Group Leiden

Just as you would expect when visiting someone’s home, new guests are given a tour of the property, which, with its many nooks and spaces is well suited for a discovery tour. The waiters are already experienced in welcoming guests because a part of the crew worked at the party centre La France in Oegstgeest. Lot & de Walvis is part of the Hospitality Group Leiden together with Van der Werff, La France and City Hall. The board consists of the brothers Richard and Wouter van Leeuwen and Rob van Wijnen. Wouter van Leeuwen and Rob van Wijnen are responsible for the hospitality companies in Leiden. Richard van Leeuwen focuses on four Harbour Clubs based in Amsterdam, Rotterdam, Scheveningen and Ibiza.

It was a warm welcome at the harbour of Leiden. Although we would have loved to get acquainted with the real Lot!

Unique pop-up restaurants in Amersfoort

15-7-2015

Coming Friday, 17 July there will be a pop-up dinner at a secret location in Amersfoort. There are still some seats left for adventurous food lovers.

Adventurous dining at pop-up restaurants

Visitors of pop-up restaurants are open to adventure and often naturally spontaneous. In addition, the hosts do a lot to break the ice and the reactions to the diners are positive. An interesting side effect is the free publicity the host location gets with such a dinner, and it offers unique closing events for locations as well. Two weeks after a dinner at the Porsche dealer one of the dinner guests bought a car and a number of sites closed shortly after the pop-up event, where the dinner leaves a nice final memory. There have been dinners at a gym, a library, a car dealer, a farmer barn and an art gallery. The initiative for the pop-up restaurants at special locations in the region was created three years ago at restaurant ‘Bergpaviljoen’ in Amersfoort.

Surprise

The dinners host never more than 50 people at a communal table. Visitors come alone, in pairs or small groups. The location of the dinner will be a surprise until the day itself. When ordering tickets, guests fill in their mobile number and dietary wishes and leave their mobile number. They receive a text message with the location on the afternoon before the dinner. For € 59.00 per person, guests receive a welcome cocktail, appetizer, a 3-course dinner, plenty of white and red wine and mineral water, bread, coffee and tea with a digestive and sweets.

Local touch

  • Nog nooit zo'n lekkere uitsmijter gegeten - restaurant Joelia - Rotterdam

Restaurant Joelia at the Hilton Rotterdam has incorporated a local touch of ‘Rotterdam’ in their restaurant and in their menu.

Local touch

Those who visit horecatrends.com on a regular basis know that I like to share distinctive details and small welcoming gestures. Last week I had dinner at restaurant Joelia, where Mario de Ridder is the chef. The interior of Joelia has had a lot of attention in many magazines with its striking design. My eyes immediately fell on the original placemats at the bar and the back of the bill afterwards. The reference to the Coolsingel in the Monopoly game is a nice local touch to this cosmopolitan concept.

Also a local touch on the menu

In his menu Mario de Ridder (former owner of the Zwethheul**) also added a local touch: ‘Colors or Rotterdam’. And although I have some ties with the city, I must confess that I had no idea of the colors of the city. That seems to be green and white, which was reflected in a delicious fish entree. And if you have the possibility to eat at Joelia’s at least try the ‘uitsmijter Joelia’, it’s so delicious! As listed on the website, Mario offers his guests an experience of top-gastronomy in all its facets. You can enjoy the Joelia’s Bites in the food corner or sitting at the bar, enjoy an aperitif in the wine cellar or experience Mario’s talent at the chef’s table or in the restaurant. We will be back, Rotterdam has a new top-level restaurant which we certainly recommend! ^Marjolein
