The croquettes in the leading role

4-12-2015

Kroketten (or croquettes) and Bitterballen (small croquettes) are a real Dutch treat. The last two years we spotted a couple of tasty varieties appearing in the market. We have made a list of them.

For years I used to make this Dutch treat at home, using recipes from the book ‘The great culinary croquettes cookbook’ by Edwin Kats, and of course I always got compliments! Truly amazing are the game croquets from this season but the croquettes with smoked eel are very special as well. We even wrote about croquettes with snails and goose meat on Horecatrends, both of whom are no longer for sale, but it truly indicates that the possibilities are endless! ^ Marjolein

Our list; croquettes in the leading role

1. CROQUÉTJE! a pulled pork-croquette

Sausage-maker Paul van den Hooven from Wild Vleesch in Rotterdam, has developed his own croquette under the name of CROQUÉTJE! The first CROQUÉTJE is a croquette with pulled pork which contains meat that is smoked low & slow on a barbecue.

2. Croquette made of Shiitake mushrooms

7. Croquette made from the queen of vegetables

Kwekkeboom introduced a croquette made of the queen of vegetables, the asparagus, in 2013. Since I regularly make a variety of the bitterbal with asparagus in the leading roll, this croquette proves that you can make endless variations with the salpicon of the croquettes and bitterballen.

8. Arancini, the Italian bitterbal

Lightly fried balls made from risotto with a core of mozzarella and smoked ham. Simple and a delicious appetizer! Italian restaurants would have their own variation of ‘our’ bitterbal.

Allegory of the South

In the iconic Augustine Church, in the heart of Eindhoven, major entrepreneurs from the region join their traditional knowledge for the ‘Allegory of the South‘. Atelier van Asseldonk will realize a complete installation, based on a twenty meter long table. The company Oogenlust will decorate the church, supported by master builder Bruns. The nave of the Augustine Church transforms at night into a dining room, where Dick Middelweerd will offer a special menu for the occasion. Guests will toast with Beerze Beer from the region. This initiative is open to visitors during the Dutch Design Week from 16 to 25 October.

The pop-up restaurant at the historic venue ‘Buitenplaats Amerongen’ is an initiative of entrepreneurs from Amerongen, Peter-Paul Swijnenburg of Buitenplaats Amerongen and Nico Donkelaar from the Olive Oil Shop, who already successfully brought two star chef Edwin Vinke to Amerongen. They combine a wonderful evening to enjoy the dishes of a famous chef with an after party to take the feet from the floor.

This month ‘Waag’ opened in Leiden. The Waag was once the bustling center of Leiden but was barely used until recently. This summer, the monument is the vibrant heart of the city again.

The Waag as backdrop for traditional events

Guests can enjoy breakfast, lunch or dinner at the Waag under the magnificent vaults of the monumental Boterhal or in the new glass construction. The Waag remains the backdrop for the traditional presentation of herring and white bread on 3 October and the Waag will be renamed the House of Saint Nicholas in late November.

Interior

Great Persian rugs and a special lighting plan transform the stately monument in a place where it’s pleasant to stay. A wall full of old scales refers to the past, when ‘The Waag’ was the commercial centre of the city and traders had their goods weighted.

Glass construction

To relieve the monumental Waag and Boterhal an additional glass construction was built behind the high, vaulted room of the Boterhal. Here is a large open kitchen located in the glass construction with a private entrance to the Mandemakers Alley.

Chicken in the lead

Freshly grilled chicken plays a major role at the Waag. On a Josper charcoal oven chickens are freshly grilled in French or Portuguese style. In addition there are salads, pastas and culinary classics like a sirloin steak, prawns, satay and a burger on the menu.

Terrace in 2016

The monumental ‘Waaghoofd’ will be the location of the new ‘Waag’ terrace in the spring of 2016, and has room for 150 guests. To achieve this the main bridge of the Waag is moved to Catharina Alley in late 2015.

Debut BV – Hospitality Management and Development

The Waag is part of Debut BV, which is responsible for several successful restaurant concepts as Mad Mick’s Breakaway Café Rotterdam, STAN & CO, Belgian Beer Café Olivier in Utrecht and Leiden, the Mexican restaurants of Popocatepetl, Hometown Coffee & More in The Hague and Stadscafé Progress in Eindhoven.

3D printed snack with edible soil

19-3-2015

Project designer Chloé Rutzerveld creates a bridge between new production and traditional cultivation with the “Edible Growth” project. The 3D printer produces a food soil. Printing food with a 3D printer is not new anymore but printing edible food soils with seeds and spores is. The soil and the seeds and spores grow into living edible balls.

Edible growth

Rutzerveld studied Industrial Design at the Eindhoven University of Technology (TUE). For the Edible Growth project she works together with the TUE and knowledge institute TNO. The technology is still in development, the software, hardware and assembling the ingredients has yet to be optimized. Edith Growth, however, has had a lot of international attention.

The technology is used to optimize the natural processes and to make the soil and plants grow together into the final product. During the growth the structure, smell and taste changes and intensify. Like, for example, a blue cheese.

3D printed snack with the edible soil

It’s a new way of producing food that connects nature, technology, science and design. The whole food chain will reduce considerably and the concept brings consumers closer to their food. It facilitates growth and reduces the ecological footprint with less food miles, it also reduces waste and freshness is in your own hands.

New York meets Brabant in café ‘De Vooruitgang’

23-1-2015

City café ‘De Vooruitgang’ (re)opened the doors in Eindhoven (The Netherlands) on 8 January 2015. A fire in the kitchen in April 2013 almost completely burned down the monumental building. Now the monumental façade is restored and the interior and layout are completely renewed.

City café ‘De Vooruitgang’

The new layout creates a lot of light in the building. This makes the café suitable for every moment of the day. The interior is based on urban influences from New York combined with the domesticity of Brabant (The Netherlands). This is created through the stairs behind the bar and the Dutch design prints at the kitchen wall. Other interior design elements: Persian carpets at the wall and there is a wall of plants with over 2.000 plants.

Eat, drink, read, meet, talk and listen

In city Café De Vooruitgang everybody should feel at home. In the middle of the big open kitchen there is a specially designed BBQ grill where the chef prepares his dishes. On the new menu of the café there will be dishes from the grill like burgers with bacon, steak and their specialty: chicken. Besides that, you can go to the café for a pasta or fish. The bar offers a range of specialty beers and wine.
During the lunch at café ‘De Vooruitgang’ there will be wraps, croques and sandwiches with salmon, cheese or a home-made meatball.

Dancing in the café

Every Friday and Saturday the café is opened till late. There will be DJ’s to create an ambiance to dance after dinner. Every Thursday night the DJ-wannabe’s can show their talent during the ‘Spin-inn’.

Decorative ceramics for restaurant

7-11-2014

  • Venkelschenker Nanda Smits & André Amaro
  • knoflookzoutvaatje Nanda Smits & André Amaro
  • boerenkoolschaal Nanda Smits & André Amaro

Gastronomy, art, design and music come together in the whirlwind of enthusiasm that is André Amaro. The Amaro Creative Industries company originated in catering on festivals but expanded into a ‘peerless creative monster’. André Amaro created a unique collection of ceramics in collaboration with Nanda Smits. The Stroomhuis in Eindhoven, studio  and residence of André Amaro houses a unique ceramic studio nowadays.

Ceramic worshippers

A part of the collection is (re)produced by a small family owned factory in Portugal. Amaro found this ceramics worshipping family close to his native village. By outsourcing a part of the production the team keeps its hands free for the dev elopement of future products to keep the collection dynamic.

Fennel bottle

The fennel bottle is designed, baked and finished in Eindhoven, can contain 20 cl of liquid and weights 550 grams. A gracious item to serve just that little extra experience at the table. The ceramics collection also includes a kale bowl and a garlic-salt-and-pepper shaker which are great for decoration as well.
