McDonald’s Next, is high-tech the solution to a healthier reputation and more sales?

14-1-2016

McDonald’s Next in Hong Kong; a new high-tech restaurant and a new experiment to revamp their reputation.

McDonald’s Next serves

The new high-tech restaurant, located in the Admiralty district, has touch-screen computers where you create and order your meal, so no more queuing in front of a counter. The new restaurant has a salad bar which is shown in the ‘theatre kitchen’. This allows consumers to watch the process of the making of their salad. Examples of the salad ingredients are asparagus, couscous, corn and quinoa. As you watch the video or check out the pictures in the article of the Daily Mail Online you can only conclude that the salad bar matches what you might expect in a deli. In addition they also serve fresh pastries and premium coffee in the McCafé style.

Besides the salad bar you can order from the regular hamburger menu or make use of the ‘Create Your Taste’ option, allowing you to build your own burger with gourmet ingredients. This ‘Create Your Taste’ option is already implemented at the McDonald’s in Australia and in New Zealand.

The Next interior

The interior; pleasant lighting for a relaxed atmosphere, long wide tables create a cafe / restaurant ambiance and like at many coffee shops chains they have wireless phone chargers. Furthermore the elements, wood, glass and stainless steel are used. They’re also experimenting with table service after 6 pm…

You will probably not recognize this McDonald’s except for the golden arches ;-). The Daily Mail concludes it’s a new attempt of McDonald’s to change direction and create a more healthier image. Well we would love to see a McDonald’s restaurant like that here in the Netherlands!

Kebab 2.0, the next big thing in food?

28-9-2015

The first European location of Baba Rafi opened in Alkmaar. In Asia, the chain has more than 1,300 locations. Kebab 2.0 adapted to the European market.

In June 2015 we wrote about plans for the initial European establishment of Baba Rafi in Alkmaar. We then wrote about how 176 private investors invested € 250.000,= in the company via Collin Crowdfund. On September 24, the entrepreneurs Sinan Gul, Hans Gradient, Baris Kürkcü and Herman de Haas opened the doors of their Baba Rafi at an AA location in the center of Alkmaar. We saw in Paris that Kebab, if adapted to local customs, can become hugely popular. There Grillé serves ‘un Kebab quasi Gastronomique‘!

Kebab for the modern, conscious consumer

Baba Rafi is the largest franchise chain in the world in the field of kebab products. With more than 1300 locations in Asia the concept is very popular. The Asian concept is fully adapted for the European market where respect for food, the customers and the environment play an important role. Baris Kürkcü: “Every niche in the food industry, from French fries-, hamburger- and chicken formulas to sandwiches, has seen a trend towards more sustainable and responsible food in the recent years. With Baba Rafi we introduce a kebab concept that is tailored entirely to the needs and desires of the modern, conscious consumer. The dishes are freshly prepared with a minimum of E-numbers and maximum sustainable and organic ingredients. In addition, we have worked closely in the development of the food with a culinary consultant and nutritionist. Thus, the dishes are suitable to eat for lunch. For everyone, even for women and children.”

With Kebab 2.0 they want to realize the largest kebab chain in Europe

Along with financial expert Hans Verloop and former McDonald’s CEO, Herman de Haas the Baba Rafi team want to realize the largest kebab chain in Europe. There is no comparable franchise concept in Europe and in total more than 10 billion euros is spend on kebab. Hans Verloop: “We can apply our experience in Alkmaar to future franchisees in many other comparable cities. From the North of Holland we want to expand Baba Rafi all over the Netherlands and after the start-up phase also start in other countries in Europe.”

Do you have a secret menu?

Hot in the USA: secret menu’s at fast food chains. From fast food chain In-N-Out, to Shake Shack to McDonald’s. Why not create your own ‘secret menu’ as a cafeteria or small fast food chain?

Last year I did visit the fast food chain In-N-Out in California, my daughter who worked and lived in New York already heard about their (not-so) secret menu. Recently I saw a video of Anthony Bourdain discussing his appetite for burgers of In-N-Out. This chain has been offering customer-created riffs on the menu which have been passed down through word of mouth since the 1960’s. At their official menu it has just three burgers (a hamburger, cheeseburger, and the ‘double-double’), it’s ‘not-so-secret’ menu adds six more. I tasted the iconic ‘animal style’ burger with a lot of grilled onions and mustard. Did I like it? Well it certainly was the most tasty fast food burger I have eaten on the West Coast. But I didn’t eat many!

How to create a secret menu

The appeal of the secret menu is a delicate matter for restaurants. You can’t promote them because of the fact that it will instantly lose its secrecy factor. It’s a matter of involving your fans and let them spread their favorite ‘secret menu’ through social media and locally through word of mouth. For more information read the article ‘Secret Burger Menus, Explained’ on Eater.

You can even check the secret menu’s at fast food restaurants in your vicinity at the website Secret Menus. At this website I even read that one of the secret menus at In-N-Out is called the ‘Flying Dutchman’. Just two patties and cheese, very trendy without gluten!  ^Marjolein

Asian Baba Rafi format starts in Alkmaar

18-6-2015

The initial establishment of an innovative European kebab franchise will soon start in Alkmaar.

Baba Rafi adapted to European standards

Entrepreneurs Sinan Gul, Hans Verloop and Baris Kürkcü took the very popular Baba Rafi format from Asia to Europe and adjusted them fully to European standards and trends. With a strong focus on healthy and sustainable dishes, Baba Rafi also wants to reach out to women and children and that distinguishes the formula from all existing kebab, döner or shawarma formats.

Confidence in the format of Baba Rafi

In order to finance the initial establishment of Baba Rafi Europe, the entrepreneurs made a successful appeal to the public: 176 private investors invested € 250.000,= in the company via Collin CrowdFund.

Kebab for today’s conscious consumer

Baba Rafi is the largest franchise chain in the world in the field of kebab products. With more than 1.300 locations in Asia where the concept is immense popular. The Asian concept is fully adapted to the European market where respect for the food, the customers and the environment play an important role. One of the initiators, Baris Kürkcü: “Every niche in the food industry, from fries-, hamburger and chicken formats to sandwiches, has seen a trend towards more sustainable and responsible food, in the recent years. With Baba Rafi we introduce a kebab concept that is tailored entirely to the needs and desires of the modern conscious consumers. The dishes are freshly prepared with a minimum of E-numbers and maximum sustainable and organic ingredients. We have worked closely with a culinary consultant and nutritionist during the development of the dishes. The dishes are suitable to eat for lunch. For everyone, thus emphatically including women and children.”

The future: being the largest kebab chain in Europe

Along with financial expert Hans Verloop and former McDonald’s CEO, Herman de Haas, the team of Baba Rafi wants to realize the largest kebab chain in Europe. There is no comparable franchise concept in Europe but there is a 10 billion euros sales in kebab fastfood restaurants. The facility in Alkmaar will be the flagship store and serves as a model for the next Baba Rafi in comparably sized cities in the Netherlands and Europe.

Digital illuminated billboard addressing women

29-5-2015

The beer brand Astra’s digital billboard is able to target its messages only to women, using gender-detection software.
Agency Philipp und Keuntje created the first digital illuminated billboard advertisement for the German beer brand Astra (from Hamburg). The billboard was installed outside the ‘Zum Silbersack’ pub in Hamburg. Philipp und Keuntje shot around seventy short videos with the comedian and journalist Uke Bosse in the leading role, all with the aim of inspiring more females to try the beer.

At the billboard, the comedian addresses passersby and specifically women with the aim to encourage them to sample an Astra beer. The billboard has been equipped with a camera and the latest gender-detection software, allowing to detect the gender and the age of the individual. Check the video for great examples of the video messages the billboard uses to ‘sell’ Astra to the passing women.

At the Burger Club at the Nieuwe Binnenweg in Rotterdam you can choose between three types of meat for all the burger they serve; MRIJ (Dutch) beef, USA Wagyu beef and Iberico pork. Difficult to choose.

Burger brought to life through thoughtful ingredients

Burgers like a Classic, BBQ, Greek, De Luxe or a juicy burger (the latter with gorgonzola in the meat) can be served with all the above types of meat. The MRIJ (Dutch) beef comes from butcher Piet van den Berg and is made from cattle grazing on the banks of the Meuse, Rhine and Ijssel rivers. For those who can’t choose, you can taste all three varieties if you order the sliders.

Owner Luis originates from Spain and you can trace back some Spanish influences in the menu. He serves a burger with chorizo and jalapeno peppers or one with Iberico ham and aioli. The fries are fried in olive oil, which clearly reflects on the taste. But they also serve a ‘Dutch Weed’-Burger, a vegetarian burger with seaweed as main ingredient. And a burger from grilled farm chicken combined with mango chutney.

Gin + Tonic at the Burger Club

Besides wine and beer the Burger Club also serves gin & tonics. Guests can choose from four types of tonics and eight varieties of gin, including Bobby’s, Hendricks and the German gin, Monkey 47.

Burger bars/restaurants are popular in the Netherlands

Hamburgers from fine quality beef remain trendy. The last couple of years we saw a rise in the number of burger bars or restaurants. If you as a restaurant owner would like to offer your guests more choice in the type of meat, check out the choice from The Frozen Butcher .

Last weekend we’ve tasted two new hamburgers from The Frozen Butcher, the Iberico Burger and the Angus certified Burger. We really loved their taste! On their website we learned that The Frozen Butcher has a whole range of burgers aside from the Iberico and Angus burgers; a Wagyu burger, a US beef burger, a lamb burger and an organic burger.

Frozen in time… Fresh on your plate

The burgers are immediately frozen after production by using special freezers to guarantee the true butcher’s quality. This technology enables them to produce without artificial preservatives, colouring agents or other additives.

SIAL Innovation Award 2014

At SIAL Innovation 2014 the Frozen Butcher won the award in the category Meat Products. The jury, made up of independent experts, selected the concept as winner because of the premium meat quality, the clean design of the packaging and the valorization of the country of origin.

Serve your guest a burger to their liking

Great way to use these burgers in a burgerbar; your guests can pick their own meat, each with another taste, another origin and another story! Give your guests a choice in buns and ingredients and let them design their favorite burger at your restaurant. ^Marjolein

Family fun all in one

4-9-2013

Our colleague Steven van ‘t Hart celebrated his holiday in America this summer. He went out to eat the ‘Pizza-burger‘ by ‘Boston Pizza’ at the Niagara Falls location. We did mention this burger on horecatrends in April (kind of a April the 1st joke) and the burger will be on the menu in September. But Steven got to taste one! Especially the Pepperoni version was considered very tasty! He also noticed that children received a mini pizza box by entering the restaurant, containing coloring pages, games and crayons. Nice small gesture… That of course can be taken home ….

A burger wrapped in a pizza

3-4-2013

The Canadian pizza chain ‘Boston Pizza’ has launched a new bun-less menu on April first. The Pizza salad, Choco pizza and the Pizza Bread Pudding of the menu were a joke, but the Pizzaburger is apparently, not a joke! The Pizzaburger is not just a burger with a pizza topping, but it is an actual bacon hamburger wrapped in a pepperoni pizza with a hand-pressed crust smothered in pizza sauce and mozzarella. There is also a five-cheese Pizzaburger available
