Restaurant Vermeer wins Global Real High Tea Challenge

On 13 October, Dutch teams challenged each other at the Miele Inspirience Centre at Vianen for a ticket into the final of the Global Real High Tea Challenge. The team of Restaurant Vermeer won the Dutch tea competition and received a seven-day tour in Sri Lanka and a ticket for the Global Real High Tea Challenge in Sri Lanka in 2015. The winning recipe will be mentioned in the Dilmah High Tea recipe book as well. Last year the Amstel Hotel Amsterdam won, which assured them the first spot in the international final in 2015.

In the months of July and August, the temporary restaurant Camping at Olof’s opens its doors in the oldest chapel in Amsterdam: the Sint Olofskapel on the Zeedijk. It will be a barbecue restaurant led by chef Chris Naylor of Michelin-starred restaurant Vermeer.

A pop-up staycation restaurant that requires you to book a camping pitch! You cannot sleep there, but you can enjoy the camping atmosphere and great food. Inspiration for chefs all over the world, create a special restaurant once your government allows you to open again!

It is an initiative of the Embassy of the Kingdom of Thailand and part of the three days of Thai National Day festivities. The event is part of Thai Kitchen to the World, a long-term project promoting Thai cuisine, gastronomy and ingredients worldwide.

Who doesn’t like a good snack from time to time? That goes for most people, of course, including top chefs. Behind the scenes, they have always created the most delicious simple dishes and snacks for themselves and their loved ones. A few years ago, the first chefs came to the realization that many more people would like to taste this. Like chef Gavin Kaysen (*) who already served a late night greasy spoon at the bar in his first restaurant Spoon and Stable years ago, New York’s favorite chef David Chang (**) who started his own fried chicken brand, Chef Schilo van Coevorden of restaurant Taiko (*) in the Conservatorium Hotel in Amsterdam who in collaboration with Febo served the limited edition ‘langoustine frikandel’ or the Valuas croquettes and bitterballen of chef Eric Swaghoven which he has been selling since 2004. These chefs already set this trend back then, this article will continue after a few of these examples of “snackization” of the culinary world where we discuss the inspiration and initiatives that the corona period brought us.

Inspiration | Will Shawarma be the next big thing in food?

We spotted Choco Kebab some years back but the last couple of weeks we got a couple of Facebook posts about this sweet version of shawarma. We also spotted a DIY shawarma in New York City and most recently a vegan shawarma that’s being served at Noma in Copenhagen. Here in the Netherlands we love a great shawarma joint, especially if they serve it with lamb meat. But we never spotted a vegan version before, some inspiration in this article! read more

The Sri Lankan tea brand Dilmah organizes the Real High Tea Challenge since 2007. This challenge is a contemporary approach of – and a quest for – the ultimate high tea.

The tea brand Dilmah, whose name is composed of the names of the two sons (Dilhan and Malik) of the owner Merrill J. Fernando, is known in almost 100 countries around the world for its quality. The tea industry has been revived by companies like Dilmah, through innovation, quality and freshness. Earlier we wrote about initiatives of this progressive tea brand which always seems to strike the right tone and push the right buttons to reach their targeted audience. Late 2014 they organized the first School of Tea in the Netherlands for example.

The Global Real High Tea Challenge in Sri Lanka

In recent years the Dilmah Real High Tea Challenge was organized in fourteen different countries. The culinary top of those countries were challenged to explore, understand and apply the product tea and its gastronomic options. They were challenged to use the ingredient tea (Tea Inspired Cuisine) and match it with food (Tea Pairing). The composed dishes were combined with pure tea, cocktails and tea mocktails (Tea Mixology). The winners of the local Real High Tea Challenge have qualified for the final, that took place last month in Sri Lanka.

The global High Tea Challenge is won by…

The team from the Museum Art Hotel of New Zealand won this culinary challenge with the innovative high tea theme: ‘The Meeting of the Senses.’ A high tea with integrated taste, smell, touch and sound. The Dutch Restaurant Vermeer also managed to do well, they won a gold medal and received an award for the most ‘tea inspired dish’.

The Dutch Challenge

In 2013 Dilmah Netherlands organized the first edition. This was won by the team of the InterContinental Amstel Hotel Amsterdam. The second Dutch edition in 2014 of the Real High Tea Challenge was won by Restaurant Vermeer in Amsterdam. Both teams represented the Netherlands at the international competition.

Tea Gastronomy – The Dutch School of Tea by Dilmah

Tea is more than just a popular hot drink – its possibilities are in a constant evolution. You can combine tea with cheese, process it in dishes, cocktails or mocktails.

School of Tea

The Sri Lankan family business Dilmah organized the first Dutch ‘School of Tea’ at the estate ‘Duin & Kruidberg’ in the Netherlands. During the lessons, the visitors were given information about the production process and types of tea (the white-, green-, Oolong and black tea) and the distinction of the teas based on the scent. Of course, the visitors also received detailed information on making a perfect cup of tea and masterclasses were given about pairing tea and food.

Tea & Cheese Pairing by Betty Koster

Betty Koster, cheesemaker and owner of Fromagerie L’Amuse in Amsterdam, lets the audience experience how well tea and cheese go together. She presented cheeses from France, the Netherlands and Italy, which she combined with Natural Jasmine Green Tea and Ceylon Souchong Black Tea. Betty Koster has been experimenting with combining tea and cheese for years, we already wrote about it in 2011.

Tea Gastronomy by Jeroen van Oijen & Hidde de Brabander

During the ‘School of Tea’-program Chef Jeroen Van Oijen showed participants how to make a typical Dutch soup ‘snert’ (kind of pea soup) with Dilmah Ceylon Souchong as ingredient. The smoky taste – that in a normal ‘snert’ comes from the sausage – was in this case replaced by the smoky flavor of the tea. Chef Hidde de Brabander used the tea as sour-substitute in a dessert; sacher biscuit with bitter almond and sour pear. The vinegar was replaced by Japanese ‘yuzu juice’ and the water by a green tea. The dish was combined with a Ginger and Rose black tea.

Tea Mixology by Robert Schinkel & Tess Posthumus

Bartender and tea sommelier Robert Schinkel created – along with award-winning bartender Tess Posthumus – a series of surprising tea cocktails such as Souchong Ceylon with Johnnie Walker, Jasmine Green Tea with tequilla and a cocktail of Earl Grey with Ketel One. As mocktail they presented a mix of French Rose & Vanilla tea with pear juice, ginger and fresh lime.

International debut 010/020 dinners | Chefs and sommeliers from Amsterdam and Rotterdam to New York

The leading American culinary institute, the James Beard Foundation, invited Amsterdams’ and Rotterdams’ gastronomic top talents to serve a showcase of Dutch metropolitan gastronomy in New York. After five successful editions in the Netherlands, the special concept of 010/020 dinners, in which Amsterdam and Rotterdam restaurants cook together, takes the step abroad. Cooking will take place at the James Beard House on October 24 2018 , but on September 9 you are able to try some of the dishes at Kaagman and Kortekaas at their fundraiser dinner. read more
