Thanks to access to a unique wine cellar belonging to a passionate wine collector and an ami de Bisous from the eastern part of the country, restaurant Bisous in Amsterdam is launching its Bordeaux Mondays. During these evenings, exceptional wines from the prestigious French wine region of Bordeaux take center stage. Each Monday features a changing Bordeaux theme, ranging from a specific vintage to a remarkable subregion. Wine lovers get the chance to taste exclusive wines that are currently at their optimal drinking moment.

The chance to taste a unique Bordeaux grand cru
Think, for example, of a unique grand cru from Bordeaux, such as a Château Lafite Rothschild from 1999 or a special wine from Château Margaux. Normally, these wines are only available by the bottle and are therefore less accessible. During Bordeaux Mondays at restaurant Bisous, these exceptional wines are served by the glass for a prix d’ami, allowing guests to easily discover some of the finest wines Bordeaux has to offer.
A different Bordeaux theme every Monday
Last Monday, for instance, the small wine region of Pomerol took center stage, featuring wines that are very scarce and praised for their velvety structure and deep complexity. On March 9, gems from the 2006 vintage will be opened, including wines from Château Gruaud Larose, Château Palmer, and Château Pichon-Longueville Comtesse de Lalande. Monday March 15 will be dedicated to beautiful Grand Crus, including Château Lafite Rothschild (1999), Château Latour (1998), and Château Margaux (2004).

“We have gained access to a wine cellar that will leave you speechless. Do you have a personal favorite? Have you been dreaming for years of that one château? Or would you like to taste a specific vintage by the glass? Let us know – and who knows, we might open your favorite on a Monday,” says sommelier Erwin Walthaus.
New menu and weekly Chef’s Menu
During Bordeaux Mondays, Kooijman creates a main course that perfectly pairs with red Bordeaux wines. Co-owner Bas Noorman explains: “A beautiful glass of Bordeaux costs between €20 and €170 on Mondays; the highest price applies, for example, to a grand cru from the 1990s. We deliberately keep our margin low because we want to make Bordeaux wines better known and loved again.”
Head Chef Thomas Kooijman will introduce a renewed menu at the beginning of March featuring both beloved Bisous classics and new dishes. Also new is the weekly changing Chef’s Menu, consisting of three courses for €55. This menu is available for dinner from Monday to Wednesday and for lunch from Thursday to Saturday.
