Txokos-menu showcases Basque specialties
In the Basque Country, cooking is more than preparing food: it’s heritage, almost sacred, kept alive in the private txokos (cooking clubs) where generations gather. It’s all about friendship, culinary passion, and tradition. At Sagardi, that same culture is at the heart of everything, with the grill as both the centerpiece of the kitchen and a symbol of Basque identity.
To mark Sagardi’s fifth anniversary, Iñaki and Mikel have created a special menu inspired by the place closest to their culinary hearts: the txokos. From baby squid stuffed with minced tentacle, to buttery cod in an intense, mole-like Biscay sauce made with 25 ingredients, and of course, the iconic txuleton — this is Basque cuisine in its purest form.
