Every day, we spot fun and inspiring new concepts. This week, the concept of Parisian bouillon restaurants is also coming to our capital city early next year: Bouillon d’Amsterdam! A renovation of Friethuys Schaijk and in Leiden, preparations are in full swing for the opening of a Spaghetteria location.

Bouillon d’Amsterdam in the Hotel Die Port van Cleve promises high-quality food at a fair price! With dishes at affordable prices (€3 to €16), the owners aim to appeal to a big audience. Friethuys Schaijk, owned by Bart Bernsen and Luuk Vos, was renovated in three weeks and has a fresh, contemporary design for a traditional snack bar. And in Leiden, a new Spaghetteria location will open at Lange Mare 40, in October.

Bouillon d’Amsterdam opening March 2026 | With De Blauwe Parade & Bouillon Service

In March 2026, Michiel van der Eerde, Nick van der Meer, Tom de Rooij and Jasper Albers will open Bouillon d’Amsterdam on the Nieuwezijds Voorburgwal. With this concept, they are bringing the classic Parisian bouillon restaurant to the Dutch capital in a contemporary way. The restaurant, part of Hotel Die Port van Cleve, combines French quality with authentic Amsterdam dining culture at accessible prices (€3 to €16).

Bouillon restaurants originated in Paris in 1854, offering workers and market vendors affordable and nourishing meals. Bouillon d’Amsterdam draws on that idea while honouring the history of its location, once a gathering place for people from all walks of life. The restaurant aims to revive that same sense of community, welcoming everyone for lunch, dinner or drinks. The menu presents a modern interpretation of classic dishes, while retaining the iconic Numbered Steak, the proud signature of the historic hotel.

Alongside the restaurant, De Blauwe Parade will open: the first Dutch cocktail bar serving classics made with local spirits, without the hefty price tag! Drinks will be paired with Dutch favorites such as bitterballen, herring, meatball sandwiches and local charcuterie. For guests on the go, Bouillon Service will offer takeaway sandwiches and coffee-to-go.

Bouillon d’Amsterdam promises to become a vibrant, all-day destination where history, affordability and hospitality come together.

Renovation of Friethuys Schaijk

The second branch of Het Friethuys, owned by Bart Bernsen and Luuk Vos, Friethuys Schaijk, has undergone a complete makeover. The result is a fresh and contemporary design for a cafetaria – or as they like to call it, an artisan snackbar – where guests can also enjoy lunch, dinner, and the best ice cream. The first Friethuys location was established in Oss and this autumn, they will open their third location in Herpen.

Studio Entr. created and developed the interior concept for Friethuys Schaijk. The friendly village atmosphere of Schaijk and the nearby Maashorst nature reserve served as inspiration. Wooden discs on the back wall reference the surrounding forest, while the phrase “Blij da’ger bent” (“Glad you’re here”) is a typical local greeting.

Large cabinets and custom-made benches in the bay windows give the venue a warm, homely feel and create intimate seating areas with views of the village. Thanks to tight planning, Studio Entr. completed the renovation in just three weeks, allowing both regulars and new guests to quickly enjoy the renewed Friethuys Schaijk.

Benvenuto a Spaghetteria! | A new location opens in Leiden this October

This October, siblings Christian (31) and Eveliene (28) will open a franchise location of Spaghetteria at Lange Mare 40 in Leiden. Both share a passion for hospitality and good food: Christian has been happily working in the kitchen for years, while Eveliene feels completely at home in the front of house. Together, they dreamed of starting something of their own, and after inspiring discussions and a visit to the Pastafabriek in Amsterdam, choosing Spaghetteria was an easy decision.

Spaghetteria now has twelve locations across the Netherlands, mainly in Amsterdam, Utrecht, and Rotterdam. Renovations at the Lange Mare location are still underway, but in a few weeks, locals and visitors will be able to enjoy artisanal pasta in a warm and relaxed ambiance.

The menu features classics such as Penne rigate all’arrabbiata, Ravioli ai porcini, Caserecce con salsiccia Toscana classica, and Tagliatelle con pesto di pistacchio e gamberi – and much more!
