Band of Bohemia | Culinary beer at a brewpub in Chicago

Band of Bohemia, a brewpub in Chicago has been awarded with a Michelin star last November. Very special if you consider the fact that beer is the main event at this brewpub. The Band of Bohemia received the Michelin star after being open for just one year. Michelin is awarding stars to more and more surprising food joints. For example in Singapore where street food stalls Hong Kong Soya Sauce Chicken Rice and Noodle and Hill Street Tai Hwa Pork Noodle got a star. More recently we had dinner at The Harwood Arms, the only English pub in London awarded with a Michelin star. Which surprising kind of restaurant, food bar or food truck will be next in line after Chicago, Singapore and London? read more

A Christmas wreath as dessert for the whole table

Desserts shared by the whole table, like a Christmas wreath from meringue,  is one of the fine examples you can come up with for Christmas. If you have great examples you’re willing to share, we love to mention it as inspiration.

On a regular basis we hear that the ideas we show at our website are not in line with the daily reality of the restaurant or hotel entrepreneur. There is too little time to bring ideas, with your own twist, in practice. Earlier this year we have written about the trend in Bistros to serve desserts for the whole table. Like a giant profiterole or chocolate balls which are broken at the table. It provides a lot of commotion at the table and is very easy to adapt to your own capabilitees!

 Inspiration from colleagues and Pinterest

Chefs with Michelin stars are sharing inspiration, Grant Achatz (among others from Restaurant Alinea in Chicago) for example inspires us regularly with video’s like this one about his menu with as dessert the   chocolate ball. Inspiration other chefs can use for their own dishes. Pinterest can be another source of inspiration.

A Christmas wreath as dessert

Wherever you look for inspiration, sharing a dessert with the whole table is special and cozy in the Holiday season. Last month I made a huge long profiterole, filled with lemon curd and sour cream and fresh fruit for a party. Profiteroles can be made in all kind of shapes, so it’s easy to adapt it to Christmas. Last weekend, I made a Christmas wreath from meringue with raspberry sauce, fresh red fruit and some holly leaves as decoration. Easy and fun to eat! ^ Marjolein

‘The World’s Best Chefs’

Here’s a video about the new television series ‘World’s Best Chefs’. It is a new series from Fox in which Katie Button, chef of restaurant Cúrate in Asheville, North Carolina, visits a number of three-star chefs; Grant Achatz, Ferran Adrià, Joan Roca, Alex Atala, Michel Bras, Daniel Humm, Gaston Acurio, Massimo Bottura, Andoni Luis Aduriz and Jose Andres.

We want to see this series in the Netherlands!

We can’t wait for this series to start in the Netherlands and we think a lot of chefs and foodies do too. Who is going to broadcast it?

Update: from 26 October on, 24 Kitchen will broadcast ‘The World’s Best Chefs’ in the Netherlands.

Cocktailbar 2.0

The Aviary is a luxury and exclusive cocktail bar in Chicago, opened by the chefs Grant Achatz and Nick Kokonas. Cocktails will be elevated to real ‘dishes’, created and prepared in a state-of-the-art kitchen, and where innovation and tradition both are honored. The Aviary does a reservation lottery, where only a few are honored on a daily base.

Paying in advance for Taylor Swift, not for your restaurant reservation
