Nestlé uses a food truck to let chefs get acquainted with their new CHEF sauces: Chef on Tour…

Nestlé makes use of the street food revolution that has led to an outburst of street food and food trucks. According to Nestlé, street food brings people together, the food truck vendor is often the producer and educates the consumer where the product (or dish) originates from, about the ingredients and how it is prepared.

With this in mind Nestlé shows their costumers how to make use of their new product with CHEF On Tour. Nestlé’s culinary advisor (chef Edwin Detering) exclusively promotes the ‘CHEF’ sauces in his own food truck. He explains the preparation of the sauces, the ingredients and its variations.

The sauces of ‘CHEF On Tour’

From 27 October until 12 November Nestlé visited a dozen of hospitality organisations. Nestlé Professional involved chefs of the Van der Valk hotel chain in the development of the ‘CHEF’ sauces. As part of that collaboration, Nestlé wanted the entire kitchen brigade at the Van der Valk hotels to become excited about the sauces that they developed with their colleagues.

The food truck was located at the (supplier)entrance of the kitchen of the hotels. Nestlé took the whole crew out to the food truck at an appropriate time (during the ‘mise en place’ before lunch or dinner). The demonstration only lasted 15 to 20 minutes, so the brigade could immediately get back to work. These are the sauces they got to know during their short break: CHEF Peppersauce, CHEF Red Winesauce, CHEF Stroganoff sauce and CHEF Grillsauce. At first the crew tasted just the sauce (heated), then combined with a piece of grilled sirloin steak and finally with a piece of baked chicken thigh.

Are we going to see ‘CHEF On Tour’ more often?

Nestlé’s vision on this subject: “If ‘CHEF On Tour’ is appreciated by the chefs and their teams, then we will definitely consider visiting other chains and/or individual hospitality organisations with this concept. We might even show up at some other hotel and/or restaurants events in 2016.”

Around the fondue tree ….

The Kapellerput brings a winter habit to the Netherlands. They went to France for inspiration and came back with an alternative ‘break’ during meetings, cheese fondue. You can do this around a fondue tree, a bar table with space for a bottle of wine, glasses and a fondue pot. The fondue tree can also be used at parties of course.

Maybe you already know the l’arbre à fondue, it originates from Switzerland and is used by restaurants and hotels located in winter sports regions, since a few years. A slumber party at The Mark hotel

At the 5-star hotel ‘The Mark’ in New York one can book a Slumber Party Suite. The hotel offers extra attention to the children of their guests by providing a sleep-over service and some more child friendly initiatives.

The Slumber Party Suite in hotel ‘The Mark’ is specifically designed for parents with young children, including their own tepee. Upon arrival at the suite, the children are surprised with chocolate milk, cookies and an in-room family movie.

The Mark Hotel really offers special extras that their young guests will love, and so will their parents. For the very young ones they even have a stroller available, completely in the style of the hotel. Designed in collaboration with stroller manufacturer, Maclaren. They’re ideal for a stroll through Central Park, located nearby. A tour through the ‘Metropolitan Museum of Art’ is organized for children from 10 to 13 years to teach them a bit about the art and culture of the city.

Rumor around the brand

In addition, the hotel has bicycles available designed in the style of the hotel (black and white stripes), including a black helmet and a basket. Do you prefer to stroll through Central Park? You can also enjoy a ‘lunch-to-go’ prepared by chef Jean-Georges Vongerichten. The picnic basket includes luxurious ingredients, a blanket, cutlery and spices. In order not to get lost in New York’s largest park, The Mark also designed a map so guests can easily navigate through Central Park. Four legged friends are welcomed with open arms as well. The dog has receives his own basket of the brand ‘Molly Mutt’ and water bowls with a coaster that is specially designed for the hotel. This creates a ‘slumber party’ including the family dog! All those extras creates a lot of ‘rumor around the brand’.

Inspiration for hoteliers

The service that The Mark Hotel provides is very thorough. However if it inspires another hotel owner to personalize sleeping arrangements for children in a family suite, that would be wonderful. In addition, a family dog getting a warm welcome is quite unusual, especially in large cities. Hotel The Mark has inspired us before in 2013, with a 24/7 shopping service at the luxury department store, Bergdorf Goodman.

Mini kiwi fruit: kiwi berries

In Britain, supermarket Waitrose has started selling kiwi berries which are grown in Withers Farm in Ledbury, Herefordshire.

The berries have the size of a grape and can be eaten whole. It looks a lot like the original Kiwi fruit from New Zealand but is a fraction of the size and doesn’t have furry skin. It looks a bit like a gooseberry, but tastes sweeter. The kiwi berries are getting more and more popular, we already spotted the berries in America last year at specific high end food markets. Farmers around the world are now producing it commercially. Like the article in The Daily Mail tells, supermarket Waitrose even started selling them in its stores all over Great Britain. One of the sellers of the kiwi berries in the Netherlands is Nature’s Pride.

The kiwi berries are available during the months February, March, April, September, October and November. The berry grows wild in parts of China, north-eastern Siberia, Korea and Japan. The berries are high in antioxidants, Vitamin A, C and E as well as Potassium and Magnesium.

The bakery Biscuiteers in London makes birthday card biscuits. It’s something totally different than sending a regular birthday card or a bouquet of flowers.

Besides the normal assortment that most bakers have, Biscuiteers has an extra range with tins filled with biscuits for special events and birthday cards made of cookies. Besides the standard “cookies birthday cards”, you can personalize some birthday cards as well. They can put a name or a small text on it, for example. The bakery Biscuiteers has 2 shops in London and their biscuits are shipped worldwide.

Inspiration from Biscuiteers for the hospitality industry

Recently, we wrote about some great initiatives to bring attention to someone’s birthday, like the Refinery hotel in New York, which offers guests a birthday cake from the famous Magnolia Bakery if they celebrate their birthday at the hotel. By creating something special you can attract new guests, for instance a separate and festive ‘edible’ invitation for a dinner or lunch on a guests birthday! And when you do that, make sure your audience knows what you’re doing. Earlier we wrote that the use of local bloggers and youtube-bloggers can work. Check this video of Tanya Burr, she is one of those new stars known from Youtube. She especially appeals girls of 16+. In a more than 13 minutes long video, she shows all her birthday presents with at the end a birthday card made of biscuits by Biscuiteers. Until today this video has more than 873 000 views. That beats every ad!

Sleeping on a Dutch lake in VIP houseboats

23 September was the official opening of the new Center Parcs VIP houseboats in the old Marina De Eemhof. The luxury houseboats offer fantastic views at the Eemmeer.

Last summer, we wrote an article about the catamaran hotel rooms from design studio Salt & Water from Serbia. The design of the catamaran hotel had just won the Millennium Yacht Design Award. This project was developed with the aim to promote tourism on inland waterways in Serbia, which offers a stunning untouched nature. Such a project would also be great on the Dutch lakes. At the same time Center Parcs was busy with the realization of the VIP houseboats in the old Marina De Eemhof, with the southern French atmosphere of the port town Port Grimaud. The houseboats have been build by the local craftsmanship of ABC Arkenbouw to Urk.

What do the VIP houseboats offer?

Always wanted to experience what it’s like to live on a houseboat? The new, modern equipped VIP houseboats Center Parcs offer this possibility. The VIP houseboats have two floors, a total floor surface of 120 m2, can accommodate up to six people, have two bathrooms, two toilets, a private terrace, are located in the marina and offers a place for a private or rented boat. Guests can also make use of all the facilities Center Parcs De Eemhof offers. Great way to enjoy the Dutch lake, the Eemmeer!

All the ladies who loved to watch ‘Sex and the City’ are familiar with the Magnolia Bakery with its great looking cupcakes, cookies and lovely stores. And if you’d ever visited one of the stores, you probably had to wait in line to get in the shop. Just like I once did with my daughters. So what better way to celebrate the birthday of your girl and surprise her with a night at a great hotel and a birthday cake from Magnolia Bakery to top it off? The Refinery hotel knows how to surprise its guests!

Inspiration: How to surprise guests on special occasions

What’s a really attractive and special product from the surroundings of your restaurant or hotel? And I don’t mean a jar of jelly or a box of chocolates, but something special which makes celebrating a birthday at your hotel or restaurant a must for a special group of guests. I once went to restaurant La Coupole in Paris to celebrate my birthday. There waiters will sing ‘happy birthday’ a cappella at your table! And you would be surprised how many people are celebrating their birthday at this restaurant, every day! If you have found a special celebration gesture… don’t forget to let your future guests know!

The Refinery Hotel is located in New York City’s Garment District. The Refinery hotel used to be a high-end tea salon in 1912 but is now a modern hotel with loft-like guestrooms and an industrial-chic design. Check out their website for a look and feel of this high-end hotel. They even blog at least once a week and use social media in a refreshing way. Great to check out as inspiration for hoteliers all over the world.

Amstel Hotel Amsterdam reveals Van Gogh Suite

From 7 September to 5 December the Amstel Hotel in Amsterdam has a special presentation about Van Gogh. Visitors can express their own creativity on a canvas as well, with pastels, oil paint and brushes.

Honouring Van Gogh

This year marks the 125th anniversary of Vincent van Gogh’s death. Several museums and other institutions in Europe honour the Dutch artist with special exhibitions and events. Recently there was a labyrinth of sunflowers at the Museumplein, referring to one of his famous paintings.

Van Gogh Museum Relievo Collection

The Amstel Hotel launched a special Van Gogh suite and paintings from the Van Gogh Relievo collection on 15 September. The Van Gogh Museum Relievo Collection is barely distinguishable from the original paintings that are on display at the Van Gogh Museum. This is realized with a combination of the most recent 2D and 3D technology, craftsmanship and handicrafts.

The special Van Gogh Suite is available until 1 January 2016. The comfortable suite is located on the fourth floor of the hotel and is furnished in the atmosphere of his paintings. On a weathered wooden table in the sitting room, a bottle of absinthe welcomes guests. This is the drink where Van Gogh was fond of. On arrival, guests get a plate in the shape of a paint palette serving typical Amsterdam snacks. For guests who are inspired by Van Gogh there are pastels, oil paint, brushes and a canvas available. Guests can take their creative works home. Getting inspiration is easily done at the suite. At two locations in the suite paintings from the ‘Van Gogh Museum Relievo Collection’ hang on the wall. The view is magnificent as well.

The Van der Valk hotel in Eindhoven has partnered with Bakery Schellens. Together they realized a traditional bakery in the breakfast room of the hotel. Guests can witness the baker preparing the bread and pastry products freshly. It’s a store-in-store bakery which serves ‘instantly fresh’ bread.

Worldwide, there are more and more large international hotel concerns that sign up for a cooperation with formulas that establish small pickup point in the lobby. Like for example small Starbucks outlets in various hotel lobbies, but also local bakers in others. A great example is the AMCE hotel in Chicago with the Weston Town Bakery in the lobby. A great addition is their, almost old-fashioned, Knock ‘N Drop service for breakfast.

Bakery serves breakfast at the Van der Valk Hotel Eindhoven

The store-in-store ‘Bakkerij’ is the answer of Bakery Schellens and the Van der Valk Hotel Eindhoven to the growing need for ‘instantly fresh’ and artisanal bread. Additionally they will expect to interact more with their guests and offer them better quality and freedom of choice. Just grapping a quick breakfast to go, or enjoying the breakfast and slowly waking up in the breakfast room. Breakfast as part of the food-as-experience trend.

Guests can take a look behind the scenes and will have a choice of Frisian rye bread, croissants, several wheat buns, spelt- and sourdough bread, and the famous ‘worstenbroodjes’ (kind of sausage sandwiches, you should try one if you’re ever in the South of The Netherlands) and Danish pastry.

According to Rick Polman, director Van der Valk Eindhoven, is the Bakery Schellens a unique addition to the hotel and its presence increases the fresh experience for his guests. The Bakery is their response to the changing needs, trends and developments in the market. In addition, the Bakery works with themes and seasonal themes. Both the hotel and the Bakery focus on their own core business.

A very Harrods Christmas at the Mandarin Oriental Hyde Park

Although it’s still Summer, we’ve spotted the first hotel with a great new luxury package for Christmas. The Mandarin Oriental Hyde Park in London launched its Christmas Season 2015 with Harrods.

The Mandarin Oriental Hyde Park in London is partnering with world famous department store Harrods to celebrate Christmas 2015. The hotel will be showcased in two of the Harrods festive window displays. The windows will be unveiled on 1 November 2015.

Teddy Bear Tea

In honor of ‘Benedict’, Harrods 2015 Christmas Teddy, the head pastry chef Heather Kaniuk will make petit gâteaux, macaroons and handmade chocolates for a Teddy Bear Tea. The tea will be served at The Rosebery from 23 November 2015 through to 10 January 2016.

A very Harrods Christmas in the lobby

Harrods will transform the public spaces at the Mandarin Oriental Hyde Park, including the marble Lobby and The Rosebery, with a red and gold colour theme. They will create a huge Christmas Tree in the lobby which will be unveiled on 27 November 2015. (with a ‘tree lighting party’?)

Guests will be able to book a ‘Very Harrods Christmas accommodation package’, based on two rooms for two adults and two children.
