Fall 2014 Gavin Kaysen, former pupil of Chef Daniel Boulud in New York (restaurant Daniel**), took the jump back to Minneapolis, Minnesota where he originally came from and opened his first, own restaurant: Spoon & Stable. Since then the casual fine dining restaurants have been a grand success, being noticed from coast to coast in the USA.
Other than super fresh food, beautiful presentations and a great atmosphere there is something else that sets this restaurant apart; their ‘after hours special’.

This genius gimmick is what we would love every fine dining restaurant to do. Every day the restaurant features a ‘fancy fast food’-like dish that is only available at the bar and not before 22h30. This can be a creative bowl of ramen (Japanese noodle soup), duck-confit tacos, freshly made corn tortillas and basically any crazy/yum/exciting dish they can come up with.

Why is this special at Spoon & Stable so great?

There are so many reasons, first it makes your food accessible for many more people than it is now, without having to lower your dining room prices. Secondly the bar of your restaurant will be much more exciting, shooting up beverage sales. Third it gives your team a little bit of freedom to experiment a bit outside of the box. Gives them the opportunity to create and test all their crazy ideas. And last but certainly not least, it could help greatly in eliminating food waste.

Personally, I’m 25, live in Paris and infected with the foodiebug. I would love if some of the great Parisian chefs would open their minds to this idea. Imagine yourself, at a random Tuesday night, 22h30, having a cocktail and grabbing a grilled cheese reimagined by Alain Ducasse.. could it get any better?

Les Bols de Jean – the breadbowl is going French

The bread bowl is centuries old and in the United States completely common as chili or clam chowder holder, but in Europe not so much. Well that’s all about to change if you ask internationally renowned baker Eric Kayser and ‘world-famous-in-France’ chef Jean Imbert!

Since 2 weeks Jean Imbert, former winner of Topchef France, has a new lunch place right in the city center of Paris where he serves only one type of meal and that is the ‘Bol de Jean’. A ‘Bol de Jean’ is an especially developed loaf of brioche (in collaboration with Eric Kayser) that’s hollowed and the top has been cut off as a type of lid. For in the loaf you choose the dish you would like to try that day, they usually have 5 choices and they change regularly.

A must-visit lunch spot in Paris

Guess what? Delicious! The brioche is amazingly balanced, has a great structure and doen’t taste to sweet. The dish is creatively thought out and seems to match perfectly with the bread each time. On top of that it looks beautiful and it’s a new lunch concept for all Parisians. ‘Les Bols de Jean’ – I say on it’s way to become a new classic!

Creating a healthier planet while having fun with the Scale Down Challenge

The Scale Down Challenge allows you to play around with your habits and choices concerning food, energy, waste and water. Thirty simple and surprising challenges can be found on the giant interactive grocery scale that travels around to schools, festivals and public spaces. The device does not weigh people, nor products, but the choices made as a consumer.

Here’s a selection of the sparkling challenges the Scale Down Challenge offers: Veggie on vacation, Peanut Butter Boost, WTFridge, Supermarket Selfie, Chili sin Carne, Bring a Bottle and Bye Bye Plastic. With the last you be challenged to buy nothing out of plastic for one whole week!

Merel Mirage designed the scale with the young designers of the Design Academy. As participant you have to step on the scale and push one of the buttons. On the output ticket is written what has to been done and a special code to login and upload pictures on Instagram. The HOLY foundation of Merel Mirage is travelling to schools, conferences and museums with the scale to challenge as many people as possible. You can even enter as participant to devise your own challenge and compete for the Scale Down Challenge trophy which will be announced on Earthday 2016.

It could work in our restaurants and hotels as well: small gestures to create less waste and having fun trying to achieve the challenge!

Slow Cow relaxation drink

The Slow Cow relaxation drink clears the mind.

Slow Cow was developed by three hyperactive stressful entrepreneurs. They sought, and found, an alternative to energy drinks. A drink to help relax, focus and concentrate. Together with various partners and investors they launched Slow Cow in Canada in 2008.

Slow Cow promotes the feeling of natural tranquillity. The drink does not cause sleepiness or fatigue and isn’t the opposite of an energy drink at all. Slow Cow was developed in Quebec, Canada. The drink contains almost no calories, no caffeine, no sugar and no preservatives. It does contain extracts of green tea, valerian, chamomile, passionflower, lime blossom, lemon grass, potassium and sodium.

Alternative

The creator present the soda as an alternative to every day’s hectic pace, the adrenaline and race against the clock. In terms of taste it could have been a bit less sweet in our opinion. That will probably be due to our limited energy drink consumption normally. It is certainly an interesting alternative to high school students who are regularly hyper on the caffeine and sugar bombs that they consume in large amounts.

Moringa will be introduced in the USA with the help of a celebrity chef

A new leafy, nutritious plant called ‘Moringa’ has been introduced in the USA. And now, celebrity chef José Andrés, will start helping to introduce the Moringa with his non-profit, World Central Kitchen. This in cooperation with the first American moringa company, Kuli Kuli.

While kale is still very popular as superfood in the USA, José Andrés will try to seduce the Americans to start using the Moringa leaves. The Moringa oleifera tree, also known as the Miracletree is a nutrient-dense plant with nine essential amino acids, 27 vitamins and 46 antioxidants. Almost all parts of this tropical tree can be eaten or do have medicinal values. The Kuli Kuli company  makes a pure Moringa vegetable powder. And this is the product they are trying to make more popular in the USA. Moringa is also available in the Netherlands.

#MoringaInspired

Together with the Kuli Kuli Company and the Haitian nonprofit Smallholder Farmer’s Alliance, the World Central Kitchen launched a nationwide moringa recipe competition on Instagram, using the hashtag #MoringaInspired to raise awareness and support moringa farming communities in Haiti. The #MoringaInspired recipe competition seeks to draw creative and inspiring food and beverage creations from consumers using Kuli Kuli Pure Moringa Vegetable Powder. According to thefoodpeople, one winner will be selected to win a trip to Washington DC, including dinner at Jose Andres’ new restaurant – China Chilcano.

Your Take On #centerparcslol

Center Parcs organized a contest under the title “Your Take On” where teens can film themselves in all kinds of activities both inside and outside of Center Parcs. The company works together with well-known vloggers (video bloggers) like the ‘Knol brothers’ that promote the contest. Contestants can upload their videos to Instagram with the hashtag #centerparcslol.

Performance by rapper Dio

The maker of the best video will win a day of activities and an exclusive concert by rapper Dio at Center Parcs De Eemhof. Dio is a Dutch rapper who is known from the songs ‘Dom, Lomp en Famous’ in collaboration with the Opposites and Willie Wartaal and ‘Tijdmachine‘ with Sef.

Enzo and Milan Knol

Among other vloggers Enzo and Milan Knol collaborate with Center Parcs for the campaign. Both are social media stars that focus on Dutch teenagers. Enzo Knol is a YouTube hero with nearly 800.000 followers and often new videos by him are viewed more than 200.000 times within a single day. Milan owns Youtube channel DagelijksHaaDee (550.000+ followers) and his other channel DitIsMilan is good for 320.000+ followers.

Pop-up power food restaurant with popular writer Rens Kroes

For lovers of healthy and delicious food the popular writer Rens Kroes is a true hero. She is no longer ‘the little sister’, the Friesian has built her own health empire.
The second book of Rens Kroes ‘Power Food – From Friesland to New York’, was launched mid-June. In a sold out pop-up restaurant, guests could enjoy a very healthy dinner with dishes from her new book.

Rens personally welcomed herthe guests, and had a culinary contribution to the diner as well, supported by a team of chefs. It was the first time that Rens presented her dishes to the public this way and all guests received a copy of the new book to take home. With two dinners and one lunch, a total of 135 guests could enjoying the food. That’s only a fraction of the 72.000 Facebook fans, 17.600 followers on Twitter and 223.000 followers (!) on Instagram and thus screaming for more events like these!

Friesland to New York

Rens was inspired by what she has seen, tasted and learned in Friesland and New York. She uses fresh, pure ingredients, and makes tasty dishes with nice combinations of spices. For every moment of the day Rens offers delicious and original, easy recipes. In daily life Rens is a nutrition coach and advises people in adapting a healthy lifestyle and diet.
