The Vega Pop-up restaurant will be in Rotterdam in October

From the first of October the Vega Pop-up restaurant will serve exclusively vegetarian and vegan dishes in their pop-up restaurant in Rotterdam for five days per week (Wednesday/Sunday). They will be in the ‘Westelijk Handelsterrein’ in Rotterdam for the entire month of October.

Why a Vega Pop-up restaurant?

Earlier we wrote about the initiative of, amongst others, Friedjof Kempenaar. They want to show the people in the Netherlands that the vegetarian kitchen is already far beyond the ‘Birkenstock’-image. They serve various small dishes to choose from the menu but you can also opt for a full evening menu. The dishes are served in the size of a ‘side dish’ so that you can taste even more … The wine list is vegan as well, which means that the wines are not filtered with the use of animal products.

Improve the image of the vegetarian and vegan cuisine

Vega Pop-up responds to the lack of good, but especially modern, vegetarian and vegan restaurants in the Netherlands. Through a variety of campaigns and food scandals, more and more people start eating ‘mindfully’ and sometimes even make the choice to eat vegetarian or vegan. At most restaurants the choice for these people is still poor. The Vega Pop-up is serving a trendy choice of vegan or vegetarian dishes and is having a cocktail bar and a DJ until the early hours on Friday and Saturday.

Tender – Food and Recipes

Inspired by the dating app Tinder, Tender replaced the pictures of potential boy- and girlfriends with food. Three alumni of the College of Charleston have figured out that it is also a pleasurable experience to swipe through recipes and they have developed the app Tender where you can do this.

By swiping to the left, a dish is thrown into the trashcan. Swipe to the right and the recipe is stored in your own cookbook. This makes the search through food pictures very easy. The app is aimed at the youth of 18-30 years old who want to cook at home more often but look for easy and attractive recipes. By a number of filtering options they can filter for categories like vegan, drinks, desserts etcetera. The start-up is looking to improve filters in different cuisines, prices and other options.

Development

The functionalities are somewhat limited and the app can be more intuitive, but this app shows how consumers will determine whether something (or someone) is visually appealing for them within a tenth of a second. Bagels & Beans launches the Dutch Weed Bagel at a Bagels, Beats & Weeds Party on 29 August. The bagel is 100% vegetable, vegetarian, vegan and halal and is developed during a cooperation between Bagels & Beans and The Dutch Weed Burger. The bagel is only available at the new concept store of Bagels & Beans at the IJdock in Amsterdam. The concept store will have the traditional Bagels & Beans kitchen, but is also the place where innovation, inspiration and investigation come together for future developments.

Nowadays the goji berries, chia seeds, mulberries and other superfoods are available at the supermarket. The Ice Cream Factory has made ice cream based on the superfood. The Coco Superfood ice creams are made from coconut milk, which is lactose-free and vegan. The Coco Superfood ice cream is available in two flavors: Açaï-coconut ice cream with mulberries and Acerola-coconut ice cream with goji berries. The superfood ice cream is available at the organic supermarket EkoPlaza in the Netherlands.

Friedjof Kempenaar initiated a vega pop-up restaurant in Rotterdam on 11, 12 and 13 April and is now aiming for our capital. Although he is not a vegetarian, he is intrigued by cooking without fish and meat and is convinced that the available vegan dishes in restaurants deserve an uprgade. While he is looking for a location in Amsterdam to sit 70 people per evening, you can delight yourself with an impression of the latest edition here.

Pop up store with 22 creative entrepreneurs

In the Jan Evertsenstraat in Amsterdam citizens joined forces to make the shopping street more vivid with pop-up stores. The latest achievement is the ‘Geef om de Jan Eef’ pop-up store where 22 entrepreneurs and artists host a 400m2 shop together. Doing this, they can be part-time entrepreneur and can run the shop in shifts. The product range includes goat-wool t-shirts, art, vegan wines, fashion, bikes (of course, it’s Amsterdam) and there is also a coffee corner by ‘Cup of Jo’. The combination of the various concepts enhances the reach of the shop and makes it a vivid meeting place for creatives from the area. The pop-up shops make the neighbourhood more interesting for other entrepreneurs. The street becomes a place where startups can develop in a steady pace and perhaps open a permanent shop in the future.

Drawing the attention of all passersby, the vegan restaurant Rayen at Lope de Vega street in Madrid creatively redesigned its store entrance facade. The installation is titled (fos), which means “light” in the Greek language, and “melted” in Catalan. The entry of this small eatery invites their passersby to stop and step into the ‘spotlight’.  Created by Eleni Karpatsi, Susan Piquer and Julio Calvo, the (fos) trio. The team introduced an unique installation that paints the illusion of an artificial light beam shining from above. Effectively highlighting the restaurant front door for 4 days and nights, was made using yellow tape, pineapples, a lamp, and painted pieces of art and lawn furniture. First vegetarian snack bar

At The Hague Hollands Spoor train station, the first fully vegetarian snack bar will open on 5 April. Visitors can choose a healthier and meatless version of the croquette, frikadel or hamburger. The products are 100% vegetarian and a majority of the product range is also vegan. Besides the snacks, there is a choice of vegetarian and vegan sandwiches, small dishes and organic drinks.

Ricotta cheese made of almonds

TOP Food Lab regularly organizes jam sessions in the kitchen to experiment with products. Responding to the trends vegan, raw food and sustainability, a jam session resulted in a ricotta cheese made of almonds. The ricotta cheese of almonds has the same texture as dairy-based ricotta, the flavor is different (more nutty, less cheesy) and includes an acid that is also used in the production of cheese, that results in a cheese-like experience. The ricotta cheese contains no milk and is suitable for people with a lactose and cow’s milk allergy. TOP Food Lab wants to experiment more with curing, brining, using different kinds of molds and bacteria to make a ultimate mold cheese of almonds. The goal is to sell these cheeses in shops and restaurants.

Cirque Cuisine on wheels

Two former circus clowns recently launched Cirque Cuisine, a big tent-themed food truck that has been serving up organic global cuisine since late February. There are always gluten free and vegetarian and vegan dishes. Healthy reinterpretations of classic carnival fare, like funnel cakes, popcorn and cotton candy are also available.
