Launched during the UN\u2019s climate conference in Bonn, the guide includes best practices, inspiring case studies, and flavourful recipes like jackfruit tuna salad, shepherd\u2019s pie, chickpea curry, French bean casserole, and more.<\/p>\n<p>2 minutes read<\/p>\n<p><!--more--><\/p>\n<h3><strong>Future Plates shows caterers how and why to offer healthier, more sustainable menus<\/strong><\/h3>\n<p>Following the example of the Paris Olympics, COP28, and even the City of New York, this <a href=\"https:\/\/proveg.org\/wp-content\/uploads\/2025\/06\/Future-Plates-Sustainable-Catering-Guide-06-2025.pdf\" target=\"_blank\" rel=\"noopener\">Future Plates<\/a> guide makes it easier for others to do the same. Although the guide by <a href=\"https:\/\/www.instagram.com\/proveg.inter\/\" target=\"_blank\" rel=\"noopener\">Proveg International<\/a> is aimed primarily at UN event caterers, the content is valuable for all organizers of large gatherings. At the Bonn June Climate Meetings, the guide\u2019s impact was already visible: 57% of the hot lunch options were vegan, and 14% vegetarian. Snacks followed suit with 37% vegan and 46% vegetarian offerings.<\/p>\n<p>\u201cMany of us leave big events with unforgettable memories\u2014but the food often leaves much to be desired, especially in terms of sustainability,\u201d said Jasmijn de Boo, Global CEO of <a href=\"https:\/\/www.linkedin.com\/company\/proveginternational\/\" target=\"_blank\" rel=\"noopener\">ProVeg International<\/a>. \u201cWith this guide, it\u2019s easier for caterers to deliver meals that are climate-friendly, healthy, and tasty. Plant-based ingredients, like legumes, vegetables, and grains, are often more affordable than meat, which requires more land, water, and resources.
