On the rooftop of the Pullman Eindhoven Cocagne Hotel, home to restaurant Vestdijk47, lives a special population of honeybees. To mark the occasion, the restaurant is putting their rooftop honey in the spotlight.<\/p>\n<p>1 minute read<\/p>\n<p><!--more--><\/p>\n<h3><strong>Restaurant Vestdijk47 at Pullman Eindhoven<\/strong><\/h3>\n<p>At <a href=\"https:\/\/www.instagram.com\/restaurantvestdijk47\/\" target=\"_blank\" rel=\"noopener\">restaurant Vestdijk47 in the Pullman Eindhoven Cocagne<\/a>, it\u2019s not just about flavour\u2014it\u2019s also about awareness. In honour of World Bee Day on May 20<sup>th<\/sup>, they\u2019re sharing the story behind their honeybees. Under the care of beekeeper Jack, who started fifteen years ago out of a deep concern for bee welfare, thousands of bees produce honey right on the rooftop of the Pullman Eindhoven hotel. The honey is harvested a few times a year and finds its way into dishes, cocktails, or even as a welcome gift for returning guests.<\/p>\n<p style=\"text-align: center;\"><em>\u201cWhat drives me isn\u2019t harvesting honey, but helping the bees. In an urban environment, bees can surprisingly thrive and contribute to biodiversity. On the rooftop of Pullman, we\u2019re creating something small but powerful: awareness, a touch of nature in the city, and a unique ingredient on the plate,\u201d says beekeeper Jack.<\/em><\/p>\n<h3><strong>Rooftop honey | A personal gift with a local story<\/strong><\/h3>\n<p>The honey harvested from the <a href=\"https:\/\/www.instagram.com\/pullmaneindhoven\/\" target=\"_blank\" rel=\"noopener\">Pullman Eindhoven Cocagne<\/a>\u00a0rooftop is completely natural and unprocessed. Unlike many supermarket varieties, this honey still contains valuable elements such as pollen and nutrients, which not only enhance its flavour but are also known for their potential to relieve hay fever symptoms. Harvesting is done with care and respect for the bees, who overwinter on their own reserves\u2014keeping the yield limited, but all the more special.
