A wonderfully exotic experience deserving a second star.\u201d<\/p>\n<p><strong>Holi Phagwa<\/strong><\/p>\n<p>The dish &#8216;scallop &#8211; pumpkin &#8211; Madame Jeanette&#8217; is inspired by the Holi Phagwa, the Hindu spring festival. This holiday marks the new year and coincides with the beginning of spring in the northern hemisphere. People sing and dance, sprinkle each other with coloured powder. This symbolizes equality, without distinction between ranks, poverty and wealth.
