At hospitalitytrends.eu we spot many national and international trends on a daily basis. We pick the most interesting ones to write about, the smaller trends we use in our weekly column ‘Trends we spotted this week’.

This week, among other links to articles about ‘Blue caviar’, a cannabis restaurant with licence opened in Los Angeles and London’s Cocktail Week 2019 that starts today, October 4.

A new Korean restaurant will open this November in London. Seoul Bird, from the world-renowned Korean American chef Judy Joo. And the Borough Market celebrates 21 years with the launch of the Borough Market Kitchen, a new communal dining space housed in Jubilee Place.

Have you already heard about OmniPork a vegan substitute for pork meat? We didn’t but this Asian concept is looking to expand beyond Asia into the UK.

A boiled or poached egg at the 2-Michelin stars level, as from Tuesday 25 June you can have breakfast from 7.30 in the morning at FG Restaurant at De Hofbogen in Rotterdam. Master chef François Geurds is the first star chef to start serving a high-quality breakfast for passers-by.

In real life most of us often struggle to live by the Dutch expression “breakfast as an emperor, lunch as a king and dinner as a beggar” while this seems to be so much better for our health. But we can’t imagine not enjoying lunch or dinner at a Michelin rated restaurant. Now you can also have breakfast at FG Restaurant of 2-star chef François Geurds.

A perfect start of the day: enjoy culinary delights and meanwhile prepare the day with a colleague or discuss a project. ‘A good start is half the battle’ for both your health and business!

YouTube has been a source of inspiration for spotting trends the past few years. Every day, thousands of movies are uploaded with new and interesting content. We too sometimes use videos as a source of inspiration to write about. With this week again a selection of 3 videos which our colleague Vera Rauwerda thinks are worth watching.

This week videos about a group of Filipino men, they collect bird nests from caves and make soup from them. And a video about the traditional olive oil from Italy and how this is made. Finally, a video about several types of fruit and vegetables that you probably haven’t heard of before!

YouTube has been a source of inspiration for spotting trends the past few  years. Every day, thousands of movies are uploaded with new and interesting content. We too sometimes use videos as a source of inspiration to write about. With this week again a selection of videos which Vera Rauwerda thinks are cool to watch. Amongst them a video about Parmesan cheese, why is this cheese so pricey? Also a video about white-gold caviar, a rare and expensive product which is only made in Austria. YouTube is a great source for inspiration and trend spotting. On a daily base, thousands of clips are being uploaded, and we pick out our personal favorites on a weekly base. This week another top 3 of culinary videos worth watching, based on the interests of Mike Adam, one of our writers. With this week videos about chef Shion Uino from restaurant Sushi Amane in New York City, Mike loves the video because of the focus and calmness with which he creates his sushi. The video about Steven Spurrier is cool for wine lovers, Steven is a wine connoisseur who organized the first wine tasting back in 1976 where he had wines from California blindly tested against wines from France. And do you want to know more about why caviar is so expensive? The third video about cultivating the sturgeon might be interesting to watch then! read more

The humble sandwich | Bombay Bustle brings the Bombay sandwich during the British Sandwich Week

To celebrate British Sandwich Week, from 20th to 27th May, Bombay Bustle, the Indian restaurant in Mayfair from Samyukta Nair, will create a menu dedicated to the much-loved British institution: the humble sandwich. The menu will center on the classic Bombay sandwich, the famed street snack which is as much of a Mumbai staple as the stacked tiffin tins and hectic railway system that have inspired Bombay Bustle. From a modest three-ingredient sandwich to a towering grilled ‘toasty’ stuffed with cheese and chutney, every day thousands of Mumbaikers grab a piping hot sandwich straight from the chimta at one of the city’s many stalls. Speakeasy and storytelling | Foxglove and Mrs. Pound

The team behind the Ming Fat House of Jonathan Bui has created a speakeasy whisky bar in the business district of Hong Kong. They used local architect Nelson Chow Chi-Wai, to create the bar based on the story of a wealthy English adventurer, Frank Minza, who is the illegitimate son of an entrepreneur from Hong Kong’s Colonial days. He travelled the world in search of adventure and all things beautiful. However, what he never captured was the heart of his beloved, so he created Foxglove, named after his lost lover’s favourite flower, to win her back. That’s the storytelling around the speakeasy Foxglove in Hong Kong. It’s the second speakeasy of Ming Fat house in Hong Kong, the first is Mrs. Pound, a restaurant hidden behind a Chinese stamp shop! The story behind Mrs. Pound; she was a burlesque dancer who fell in love with a Chinese stamp shop owner. read more
