Bakkit.nl creates ‘the Rotterdam Roll’ – a rolled croissant in various flavours. They also sell other pastries. Speaking of croissants, Dominique Ansel, the inventor of the cronut, presented a vegan cronut for the first time in September.

Pizza Hut in Germany recently introduced ‘Pizza-Sandwich’ Melts and a special McDonald’s restaurant in Terminal 1 of Sydney Airport!

A capital injection for Zence Object in Macau: for a project to convert used tea leaves and other local bio-waste streams into packaging and other industrial items.

And an interesting design article on Eater about the neon walls, palm-shaped chairs and giant pepper mills of Shuggie’s Trash Pie, they call it maxed-out restaurant design for 2023.

Grow Up, Don’t Grow Old is a great viral campaign by GiG Hard Seltzer in which 2 old ladies speak Dutch street languages. Coca Cola has released Y3000, a soda co-created between humans and AI that is meant to taste just like in the year 3,000.

A new pop-up in LA by the luggage brand Béis, the BÉIS Hotel, is still open till July 29. And Burger King in Brazil introduced the Barbie Burger combo meal in pink.

Who doesn’t like a good snack from time to time? That goes for most people, of course, including top chefs. Behind the scenes, they have always created the most delicious simple dishes and snacks for themselves and their loved ones. A few years ago, the first chefs came to the realization that many more people would like to taste this. Like chef Gavin Kaysen (*) who already served a late night greasy spoon at the bar in his first restaurant Spoon and Stable years ago, New York’s favorite chef David Chang (**) who started his own fried chicken brand, Chef Schilo van Coevorden of restaurant Taiko (*) in the Conservatorium Hotel in Amsterdam who in collaboration with Febo served the limited edition ‘langoustine frikandel’ or the Valuas croquettes and bitterballen of chef Eric Swaghoven which he has been selling since 2004. These chefs already set this trend back then, this article will continue after a few of these examples of “snackization” of the culinary world where we discuss the inspiration and initiatives that the corona period brought us.

In recent years, we have spotted a lot of new artisanal spirits in the Netherlands. We have written about the Jongens van Oud West (the Boys of Oud West) who produce Orancello, orange-based Limoncello, and about Voerman Vieux, whose vieux is served straight up with ice cubes or used in cocktails. And about Pink Willem, the first Dutch rosé vermouth based on rhubarb, raspberry and matching botanicals and about the canned cocktails by Amsterdam-based brand Kever Jenever. We also wrote about the sustainable limited edition Hemelwater jenever by Hooghoudt: the distillery from Groningen succeeded in producing jenever from rainwater in 2021.
