Collabs & Crossovers

3-12-2019

Enjoy the blog by our colleague Niek Timmermans from Van Spronsen & Partners hospitality consultants. He blogs about the trendy collabs & crossovers, how hip and popular are they in 2019?

Earlier this year, Leonie van Spronsen wrote a blog about crossovers, how she felt 2019 could have been the year of crossovers. She kicked it off with an example of the Emmy Cheeseburger Dumplings of Mimi Chengs in New York. Two hospitality entrepreneur comrades that created a dish out of their individual bestsellers. We also have an example of this in the Netherlands, the Taiko X FEBO authentic FEBO snack wall in Tunes bar with limited-edition langoustine frikandels and Wagyu burgers specially created by chef Schilo van Coevorden.

Inspiration from 2018 | What-a-Melon

30-7-2019

Inspiration from London: Dominique Ansel Bakery in London served soft serve in a slice of watermelon sourced from Italy last summer. The ice cream, called What-a-Melon, was made with fresh watermelon juice and ‘seeds’ made of dark chocolate. It first launched at Dominique Ansel Bakery in Tokyo in 2017.

Ice Cream served in lemons or oranges is quite common but in a slice of watermelon? It looks great and delicious though! Inspiration for ice cream parlors.

The Dessert Bar in New York City | A sushi bar for sweet tooths

18-10-2018

It’s a bit long the video above, but one foodies really have to check out! Besides the fact that it’s a professional video it also shows the ambition of London born culinary expert Rory Macdonald. Since March 2017, Rory Macdonald has opened Flatiron shop Patisserie Chanson. It’s a higher-end pastry shop or as they say themselves, “a patisserie by day and a dessert bar by night”. But guests can still regularly stop by for a breakfast pastry, a quick lunch, or even an afternoon tea. The Dessert Bar is an all-sweets tasting-menu restaurant in the shop’s lower floor. Another must visit spot in NYC for foodies and sweet tooths. read more
