Rooftop concert by Hooghoudt and Kensington

The Dutch band Kensington and Hooghoudt distillery will end this summer with a bang. They join forces for a rooftop concert somewhere on a roof in the Netherlands.

The rooftop concert will be held at the end of the festival season, early September. Consumers can win tickets for this special experience by buying a Hooghoudt bottle or a Hooghoudt Kensington package at one of the Gall & Gall stores in the Netherlands. The Hooghoudt products contain a unique code that could provide access to the concert. The promotion runs from 22 June to 15 August 2015.

Cocktail Maker

It’s also possible to win tickets through the online cocktail maker tool of Gall & Gall. The practical website guides you to the perfect cocktail recipe and looks a bit like the Gastronomixs tool. After choosing a cocktail recipe people can submit suggestions for ingredients. Anyone that sends in suggestions for ingredients via the website, can win a Fever-Tree cocktail workshop as well.

Smaakmakers

Hooghoudt started the collaboration with the band Kensington to attract a broader audience. Check out the road movie from Hooghoudt about these talents from Utrecht. Besides working with Kensington, Hooghoudt works together with young and enthusiastic professionals since January 2015. They call them their ‘Seasonings’ and award-winning bartender Lennart Deddens is one of them. With the ‘Seasonings’ they want to inspire and give everyone access to special mixes and exciting recipes. “But inspiration is more than just good taste, it’s also acquired by shared experiences, such as a unique rooftop concert” says Niels Grootenboer, marketing manager at Hooghoudt.

Boco – the next step in fine dining for the masses

Leonie van Spronsen, lives and works in Paris and recently had lunch at boco bistrot where you get food made from recipes by top chefs.

It is an ongoing process, chefs decline Michelin stars, close down their Michelin starred restaurants to start a gastropub like Ron Blaauw, Michelin starred restaurants start selling take-away chicken and what self respecting chef doesn’t have a bistrot or tapas bar next to his restaurant? The fine dining world is becoming more and more accessible for the world to taste.

The French brothers Vincent and Simon Ferniot want to take this to the next level. Boco, a French F&B concept started in Paris, bringing together 8 different chefs that are renowned and celebrated in the culinary world for a fast casual, take away concepts. Every day they sell the favourite dishes of those 8 chefs made after their recipe in beautifully recyclable glass packages. On the display you can see who created the dish next to a full description of the biological ingredients.

Boco creates a culinary experience for everyone, a chance for anyone in the area to improve their daily life with a small look into the kitchen of an awarded chef. And if they want to – they can try a different chef every day of the week.

Pimento: ginger, chili, lime, tonic, no alcohol and refreshing!

Pimento – they say you have to take a sip and experience the surprise of ginger and the shock of chili. Pimento is a unique and innovative beverage made in France.
It has a strong taste like an alcoholic drink, yet it contains no alcohol. It is low in sugar, very spicy and full of taste. The chilli peppers come from Jamaica and the ginger from China and Ivory Coast (Africa).

Mixing with Pimento

Plenty of bartenders have created cocktails with Pimento. The recipes are described here.
The main uses are as follows: Neat (on the rocks with lime) / Mixed with fruit juices / Spice Beer (Pimento + beer) / (Virgin) Spicy Mojito (Pimento to replace the sparkling water) / Hot Mule (Pimento + Vodka + lime) / Spicy ‘n’ Stormy (Pimento + dark/spiced rum + lime + Angostura) / Hot Bomb (Jägermeister + Pimento).
The drink seems to be especially delicious mixed with a dark rum and lime. Rums such as Captain Morgan, Sailor Jerry, Gosling, Brugal or Kraken are currently very on-trend throughout the world and their flavours are really enhanced when mixed with a good ginger beer. But it’s also a great mixer with Jägermeister, vodka or gin. Pimento is bottled in Saverne (near Strasbourg in eastern France) by La Licorne (Karsbrau – Karlsberg Group), one of the biggest French breweries. Their head office is located in Paris. In the Netherlands the beverage is sold through La Source.

Oma’s (Grandma’s) pop-up restaurant is a restaurant serving traditional Dutch dishes. The dishes are prepared by enthusiastic seniors who still have energy and want to remain active. Benefit: reintegration of elderly and guests can enjoy meatballs, green beans and other traditional Dutch dishes.

Six Commercial Economy students from Hogeschool Rotterdam came up with the idea to establish a pop-up restaurant for seniors. Nowadays the loneliness of seniors is a big social issue and that’s why the students chose to do something about it. The idea is that the seniors will make their traditional meals which will be served in the restaurant.

Grandma’s dishes

Grandma’s soup, meatloaf or stew, who hasn’t got a fond memory of eating that particular great dish from grandma? At Oma’s pop-up in Rotterdam, guests can taste these delicious and traditional Dutch dishes. These dishes were prepared by seniors that mostly cook only for themselves and love to create more social contact this way.

A day full of activities

The seniors will have a day full of activities at the Saturday that they make their dishes. There will be a workshop by a professional chef and in the evening the seniors are preparing the dishes. These dishes will be served in the restaurant and after a nice meal the guests will get the opportunity to visit the kitchen and have a conversation with the seniors. Maybe even swap recipes! The six students are hoping that after this day, the people involved will maintain contact with each other.

Canned food in the hospitality industry

Since the start of company Bommels Conserven they are convinced that canned food is tasty and trendy. That’s why they’ve launched the concept ‘Een nieuwe blik op de tafel’. (Freely translated as ‘You can clearly see the table’).

The concept is meant for the hospitality entrepreneurs who want to keep their guests entertained with products which are easy and simple to present at different times of the day.

Canned food

The canned fish will be served at the table. It’s a complete concept with a wooden cutting board that is the connecting tool to present the products which are: canned fish, bread and garnitures matching the recipes of the fish. This cutting board is specially designed to fit the canned fish exactly, the bread is presented and there’s space for bowls with different garnitures.

How does it work?

The guests can choose the cans from the menu. These will be served by the waiters and presented on the cutting board with the matching garnitures. Serve with homemade bread for more flavour.

Beam can turn any flat surface into a big screen. It is a powerful projector equipped with a smart computer, all inside a beautifully designed casing.

Beam is already funded on Kickstarter

You can play games, watch movies or share content from your smartphone or tablet. You can also watch TV on your bedroom ceiling or project recipes on your kitchen wall. Next to that, Beam can assist you in your daily activities, like waking up in the morning with the latest news and your agenda or showing you your social updates when you come home. Beam is easy to set up and control with the Apple or Android app. You can screw it into any light socket or use the included power cable to place it on any flat surface.

With Beam the makers have created an easy to use ‘internet of things’-device that can entertain and assist you throughout the day. The patent for the technology inside Beam is pending. The fundraising went amazing, they raised more money than expected.

Inspiration

If you watch the video above you can easily imagine the use of the Beam in restaurants or hotels. Imagine your specialties of the day projected on the walls or a wall of pictures in your hotel lobby, presenting your menu, pictures of your wellness center or digital paintings. Or what do you think about presenting the kitchen crew while working on the plates of your guests? In a bar Beam could be used to project games on the tables.

Beer cocktail by Mongozo

Mongoza introduced various beer cocktails last year’s April. Now the spring has arrived, it’s time to bring the beer cocktail back. You can make such a cocktail easily with the beers from Mongozo.

Mongozo has created five different recipes of beer cocktails. The cocktail choices are; Mongozo Banana, Mongozo June Bug, Mongozo Mango, Mongozo in the mix and Mongozo Orange Samba.

Recipes

  • This is what you need to make a Mongozo Banana; 30 ml Tequila, 30ml of lime juice (1/2 lime), 20 ml of sugar syrup and top this all off with Mongozo Banana.
  • To make the Mongozo June Bug you need 30ml of rum, 15ml of melon liquor, Mongozo Cocos and Mongozos Banana.
  • The ingredients of the Mongozo Mango consists of 2 wedges of orange, 2 teaspoons of cane sugar, 30ml gin, 1/2 of a flesh passion fruit and top off with the Mongozo mango.
  • The Mongozo in the mix is made with Mongoza Coconut and rum, Mongozo Mango and rum or Mongozo Banana and rum.
  • To make the Mongozo Orange Samba you need 2 wedges of lime, 2 spoons of sugar cane, 20ml of Cachaça rum, Mongozo Banana and Mongozo Mango.

‘Reizende Sterren’ introduces a street food app for the Netherlands. Soon the food trucks and festivals throughout the Netherlands can be found through the street food app.
The ‘Reizende Sterren street food app’ provides an overview of Dutch street food
entrepreneurs, food trucks and other mobile kitchens. The recent pilot with food trucks by the municipality of Amsterdam shows that it’s the perfect timing for such an app. In addition to visibility at festivals and events, users of the app can see where food trucks are located in the city, at designated spots on the street.

Noble cheese

Recently, she made a cheese with Edwin Kats, chef-owner of restaurant Noble in ‘s-Hertogenbosch, The Netherlands. Mirjam uses Dutch milk from cows which are grass-fed in the area between Heusden and Altena as the base for her artisan, extra creamy farm cheese.

“After I had literally earned my Michelin stars as chef in the Netherlands, I wanted to achieve more and look further. That is why I worked for more than four years as Executive Chef in Lebanon and China. I’ve seen and learned a lot. My new challenge is to make as many people possible, enjoy that knowledge. Making this cheese in cooperation with Mirjam van Hest is one of the ways to show my experiences. I’ve added a lot of herbs and spices from my voyages. The Noble cheese ensures a unique taste experience. The Noble cheeses is a delicious dessert but is a surprising appetizer as well and I have used the cheese in a couple of wonderful recipes.”
